On motion the Council then adjourned to meet again on the 30th May next, for Court of Revisipn and ether business. • How Milk is Condensed. The following account of a 'visit to Borden's Condensed Milk Factory, at Massaic, is taken from the columns of the Elmira Husbandman : 1 "A long line of teams stand in front of a two storey building, awaiting their turn to be served. Upon the receipt of the milk at this factory it is immediate- ly subjected to a critical examination by an inspector, who applies his olfactory organ to the reversed aide of the can cover with surprising dexterity which eover is in turn pitched to several men who stand waiting, as if in exact imita- tion of base ball sport. If the milk is pronounced free from all taint or odor, it is poured through a muslin strainer into a large tank, when the can being relieved of its contents passes on to join its cover in a thorough submersion of hot water, with a final applioation of a jet of steam, which renders it ready for the dairyman, and also in a fit oondi- tipn for the very rigid rules of this es- tablishment. "The next step takes us to an adjoin- ing apartment where the fluid milk is awn from the tank which first receives through pipes into copper boilers of a sufficient capacity for holding 600 quarts each. Here careful attention is requir- ed in gauging the exact quantity of milk • tained within the boiler, applying t a jet of steam, and adjusting the same with uniform regularity. "The milk is next drawn from these boilers into vacntim cylinders which are stationed on the second floor, where the final process of condensation is •com- pleted. Great skill and caution must now he exercised in perfecting this last process, lest the milk becomes scorched or injured in the slightest degree. In- deed, we are told that one entire "batch” was consigned to the little stream of water which fronts the fac- tory not many months since, so great is the company's desire to maintain its established reputation. We are also informed that the greatest care is ex- eroised before receiving the milk at this factory, and absolute conformity is re- quired upon the part of the dairymen to the stipulations set out in the con- tracts with the company, regulating the dings of the cows, straining and cool - g the milk, condition of the cans, etc. eanlitiess on the part of the employees also demanded. The use of tobacco in any form, and the fumes of intoxi- eating liquors are positively prohibited is this establishment. "Onr curiosity is farther gratified by, an obliging attendant, who tells us that 20,000 quarts of milk are now received daily at this factory. To this nothing is added, it being simply cows' pure milk, - from which 75 to 80 per cent.• of water m evaporated in vacuo. This bubbling, boring substance being declared in its last stages, is now w drawn from the va- cuum cylinder into forty -quart Dans, which are instantly plunged 'in a vat of ioe water to pool.
