World Diabetes Day is on November 14. Dia-
betes is recognized as a world epidemic. The
number of people that will be diagnosed with
Type II diabetes is expected to rise dramati-
cally over the next few years. By controlling our 4I
weight, exercising, we can have a great effect on our changes
of getting the disease.
If you are a diabetic already, do you check your feet daily?
Diabetics often lose nerve sensitivity in their legs and feet.
Note particularly any breaks in the skin to prevent any infec-
tion from occurring. Its also extremely important to wear good
comfortable shoes.
People who are overweight are at a greater risk of becoming
diabetic. If you want to lose weight, start by setting a realistic
goal. Losing only 10 per cent of your current body weight can
go a long way to reduce your risk of heart disease, high blood
pressure, osteoporosis and of course diabetes. No time like
the present to start.
Many Canadians have diabetes and don't know it. Here are
some signs of diabetes: frequent urination, fatigue, excessive
thirst, change in vision and tingling or lack of sensation in feet
or legs. Once diagnosed, diabetes is very controllable. See
your doctor if you are feeling these symptoms and particularly
if there is a diabetes history in your family.

1101IEY FUDGE
WE HAVE TAKEN A NUMBER OF YEARS TO MASTER THE ART OF
MAKING FUDGE! IT HAS BECOME A
CHRISTMAS TRADITION THAT RANDY
AND I MAKE ABOUT FOUR TYPES OF
FUDGE TO GIVE AS GIFTS AND OF COURSE
I SOLD IT AS PART OF MY CHRISTMAS
BAKING OPTIONS. LAST YEAR I PUT IN
THE AMAZING MAPLE CREAM FUDGE.
THIS YEAR OUR MILK CHOCOLATE HONEY FUDGE DESERVES SOME
'SWEET' ATTENTION! ENJOY!
2 cup sugar
1/3 cup honey
1/2 cup 1/2 and 1/2 cream
1/4 cup butter
3/4 cup milk chocolate chipits
1 tsp vanilla
IN A THICK SAUCEPAN, HEAT TOGETHER THE SUGAR, HONEY AND
MILK. HEAT THIS MIXTURE SLOWLY AT MEDIUM HEAT UNTIL THE
SUGAR IS DISSOLVED. BE SURE TO STIR CONSTANTLY. INCREASE
THE HEAT AND BOIL RAPIDLY UNTIL THE MIXTURE REACHES 240
DEGREES F. REMOVE FROM THE HEAT AND ADD THE BUTTER,
CHOCOLATE CHIPITS AND VANILLA. BEAT WELL UNTIL THE
MIXTURE STARTS TO THICKEN. POUR INTO A WELL -BUTTERED 8
OR 9 INCH PAN. COOL BEFORE CUTTING. STORE IN AN AIR TIGHT
CONTAINER. WE WRAP IT IN SARAN IN BARS AND FREEZE IT IN
A ZIPLOC BAG AND THEN PULL OUT ONLY WHAT WE NEED FOR
ANY GIVEN FUNCTION. AMAZING!! THE ORIGINAL RECIPE DOESN'T
CALL FOR THE CHOCOLATE BUT WE EXPERIMENTED AND FOUND
WE LOVED TO ADD THINGS. You CAN ADD NUTS, CANDIED FRUIT,
OR DRIED CRANBERRIES AS WELL. IT IS A SOFT FUDGE SO MUST
BE KEPT COLD.
