Peach Crisp
WE ALL ENJOY AN EASY DESSERT THAT CAN BE MADE WITH A
VARIETY OF THINGS TO CHANGE UP THE FLAVOR. HERE IS A
SIMPLE CRISP THAT I HAVE MADE THAT JUST HITS THE SPOT
ON A RAINY OR COOL DAY! THE FACT THAT YOU CAN USE
CANNED FRUIT MAKES IT EASY TO WHIP UP FOR UNEXPECTED
COMPANY.
I large can of canned peaches (drained and then heating
the liquid and thickening it with cornstarch I -2 tbsp.)
1 tsp. cinnamon
Spread the peaches remixed with the thickened juice in a 9"
square pan and then sprinkle with cinnamon.
Mix together:
I cup whole wheat flour
3/4 cup oatmeal
1 bag shredded coconut
1/2 cup brown sugar
1 tsp. cinnamon
1/3 to I/2 cup margarine or butter
When a nice crumbly mix put over the peaches and bake at
350 for 30-45 minutes till peaches are bubbling through and
the crust is nicely toasted.
