And - just like white milk - chocolate milk is healthy for our teeth, since the cocoa, milk fat, calci- um and phosphorus in chocolate milk may help to protect against cavities. WHIPPED CREAM A CLOSER LOOK AT DAIRY PRODUCTS MILK For years milk has been a part of our nutrition. Rich in nutrients, we drink milk in various forms: evaporated, sweet- ened, organic, powdered, fortified, or U.H.T. milk. And what about chocolate milk? It's just as nutritious and absolutely delicious. You also know how to cook with milk. Whether it's used to make your recipes creamier, or added in powder form to improve the texture of your pastries, every culinary technique is appropriate when using it. A few simple rules to help keep it fresh can be very useful as well. CHOCOLATE MILK Similar to how it's made at home, store-bought chocolate milk is made by adding cocoa powder and a small ' amount of sugar to white milk. Pure and simple! The sugar amount, for the home made version, varies according to your preference. Some dairies may (1) Whipped cream is so rich - tasting that some fear it has no part in a healthy diet. That's the same kind of healthful fat found in olive oil and canola oil. Besides being irresistibly flavourful, butter is a source of vitamin A, a nutrient important for healthy skin and eyes as well as for strong bones and teeth. Flavour -rich butter also contains conju- gated linoleic acid, or CLA, a naturally occurring beneficial trans fat. Many studies suggest that CLA may help reduce the risk of some kinds of cancer - particularly breast cancer. So enjoy that dab of butter on your morning toast with a clear conscience! YOGURT ULTRY AKES STRAWBERRY BANANA SMOOTHIE Ingredients: 1 1/2 cups 1% lowfat milk 1 pint lowfat vanilla yogurt 2 ripe bananas, peeled, sliced 1 1/4 cups sliced strawberries 2 tablespoons honey 12-14 ice cubes In blender jar, combine milk yogi bananas, strawberries and honey; add enough ice to measure 6 cups in blender. Process until smooth, scrap- ing sides as necessary. Garnish each serving with strawberry slice and fresh mint if desired. Makes 5 serv- ings (8 ounces each).
