I FOUND EXPERIMENTING WITH FRUIT SAUCES CAN REALLY JAZZ UP A SIMPLE ANGEL FOOD OR SHORTCAKE. THIS RECIPE WAS ONE I MADE OUT OF FROZEN RHUBARB AND STRAWBERRIES AND IT WAS JUST THE RIGHT TOPPING ON MY MOM'S GREAT SHORTCAKE RECIPE. SERVE IT UP WITH WHIPPED CREAM OR TOPPING AND WOW! 2 cups fresh or frozen rhubarb cut in small pieces I cup mashed strawberries I/2 cup water I/2 cup white sugar. Cook rhubarb in water till tender and mushy. Remove from heat and add sugar. Stir till dissolved. Add berries. Stir. If you like the sauce a bit thicker you can thicken the rhubarb with cornstarch or add extra strawberries. Enjoy! Local business meeting CLINTON — An upcom- ing meeting will address the issue of keeping local businesses strong. On June 16, Huron Economic Development Matters is hosting a public forum with Jeff Milchen, co-founder of the American Independent Business Affiance (AMIBA) and international leading advocate for community- based enterprise. Milchen will offer a pre- sentation illustrating the economic and civic impor- tance of sustaining a strong base of local, inde- pendently -owned busi- nesses. He'll also explore the hidden costs that accompany chain store proliferation and provide numerous success stories of programs developed by Independent Business Alliances to support com- munity-based businesses and stop chains from dri- ving out locals. Milchen has been on the leading edge of the local- ism movement, having co- founded and directed the first Independent Business Alliance (IBA) in Boulder, Colorado, in 1998. Three years later, he cofounded AMIBA to help other com- munities start successful IBAs of their own, create a network for collabora- tion among them and begin building momentum for national shifts. The morning session June 16 will feature examples from many of more than 40 alliances now operating across the continent, from towns of a few hundred people to major cities. "Independent businesses are struggling for survival everywhere," said Milchen. "But through col- laborative efforts and the active involvement of citi- zens, communities have proven that harmful trends can be stopped and home-grown businesses can still prosper." The presentation will introduce programs from across three realms, including public informa- tion campaigns about the benefits of doing business locally; organizing collab- orative purchasing, mar- keting and media cam- paigns among business members; and creating a visible public presence for independent business owners. The event takes place at the Clinton Town Hall Auditorium June 16 from 8:30 a.m. to 12:30 p.m. and is free and open to the public. Space is limit- ed.
