THE RECIPE FROM LAST WEEK (CHICKEN TACOS) AND THIS RECIPE WERE BOTH RESULTS OF JUST HAVING SOME FUN WITH THE FOOD I HAVE ON HAND! THE KEY IS WRITING DOWN THE INGREDIENTS RIGHT AWAY WHEN THE RECIPE WORKS! I AM PERFECTING THAT SKILL STILL. ENJOY WITH GREAT TASTING BAKED CASSEROLE. Cook 2 cups rice in 4 cups water with 1/2 tsp butter and salt till tender (about 35 minutes) 1 Ib. lean ground beef browned I sliced onion 1 rib celery chopped 1 garlic clove Salt and pepper to taste Add the onion and celery and garlic with seasonings to browned beef and cook till soft. Mix with the following: 1-14 oz drained and rinsed can kidney beans 1/2 cup salsa 1/2 cup ketchup 1 cup water The cooked rice Put into a greased casserole dish and cover with I cup grated cheddar cheese.
