Birthday donation Some special treats for your loved ones
Valentines is a great time to feature a few special recipes that you might
enjoy preparing. Of course Randy and I enjoy making a special dinner
around this day and our own kids think they too
should have ain special meal ideas.

I do tend to favour Randy's suggestions for this
day. Included are a few recipes that we have often prepared together and
served up at special occasions. Have a great Valentine Time with your
honey!
"Wigs For Kids" - Exeter girl Vanessa Krupka cel-
ebrated her seventh birthday Jan. 25 by donating her
hair to "Wigs For Kids," an organization which cre-
ates wigs for children who have lost their hair to a
sickness, like cancer, which Vanessa's nana survived.
Vanessa, above and below, was excited to help out
says, her mother Noreen, above and below right.
"Vanessa has a heart of gold. She is not only beautiful
on the outside, she is beautiful on the inside as well."
Vanessa donated 12 inches of hair to "Wigs For Kids?'
"Vanessa was so brave," says Noreen, adding, the
family is "so proud of you with your generosity and

ORIENTAL
CABBAGE SALAD
THIS RECIPE IS A WINNER FOR ALL THE ADVENTUROUS THAT
WANT TO STRAY FROM A TRADITIONAL COLESLAW. OUR FAMILY
HAD THIS AT BOTH OF OUR FAMILY CHRISTMASES AND A FEW TIMES
IN BETWEEN THE HOLIDAYS. EVEN SOME OF MY KIDS WHO DON'T
EAT COLESLAW ATE THIS AND ENJOYED IT A LOT.
1 Nappa or Bokchoy sliced thinly
(or shredded cabbage)
1 bunch green onions chopped fine
Melt: 1/3 cup butter and mix with
1 package raw, crushed ramen
noo-
dles
(with seasoning)
1/2 cup sesame seeds
1 cup sliced almonds
Put on a baking sheet and
bake till lightly toasted at 350 (about 15 min.)
Stir a couple times.
Dressing:
1/3 cup white vinegar
2/3 cup white sugar
2/3 cup olive or canola oil
3 tbsp. soya sauce
Heat `til sugar is dissolved. Cool and refrigerate. Toss
together with noodles and nuts and cabbage.
I prepared the ingredients ahead and stored them in
separate containers `til ready to use them.
taste. You can add apples or a pear to this mixture.
Try a just ripe mango chutney. Use the basic recipe
but adjust sugars and seasonings. You can always
add cinnamon or ginger for a new twist. This is a
recipe to play with. Have some fun!

WHEN WE WERE GROWING UP WE OFTEN REQUESTED
THIS CRAZY CAKE. THE INGREDIENTS WERE ALWAYS SO
UNUSUAL COMPARED TO THE NORMAL CAKE! WE
ENJOYED A GLAZE -TYPE ICING OR A CREAMY CHOCO-
V,,LATE BUTTER ICING. IT WAS A GREAT HIT
WITH FRIENDS, FAMILY ALIKE.

TOGETHER! NOTE, I HAVE FIDDLED
TERIYAKI MARINADE
ONE OF OUR FAVOURITE TYPES OF MEALS WOULD BE PORK TEN-
DERLOIN. WE LOVE IT SLOWLY COOKED, BARBECUED AND DONE UP
INA CREAM SAUCE. I CHOSE TO PUT THIS MARINADE IN AS A WAY
YOU CAN SERVE UP A WONDERFUL FANCY PORK DINNER. BE SURE
TO SERVE UP WITH A FRESH FRUIT SALES OR A VERSION OF THE
FOLLOWING PEACH CHUTNEY. THE FOLLOWING MARINADE IS GREAT
ON PORK, CHICKEN AND BEEF AND IS A LIGHTER TASTING VERSION
THAN SOME RESTAURANT TERIYAKIS. I SUBMIT THIS RECIPE WITH
MY BARBECUE SUMMER FEATURES OFTEN BECAUSE IT IS A WINNER.
ENJOY!
1/2 cup oil
1 cup soy sauce
3 tbsp. brown sugar
3 mashed garlic cloves
1 tbsp. grated ginger root or 1 tsp. dried ginger
2 tbsp. sherry (or 2 tbsp. red wine vinegar)
Mix all ingredients together and set aside a small bit of
marinade to have for a final basting of the meat. Put the
remaining marinade in a large Ziploc bag with the pork
tenderloin and marinate at least 4 hours or overnight
and in the refrigerator. Remove meat from marinade
and BBQ or cook covered in a slow oven 'til tender and
fully cooked. WOW!!
PEACH CHUTNEY
SINCE THE TIME WHEN I WORKED AT EDDINGTON'S, IN
EXETER, I HAVE LEARNED A FEW THINGS ABOUT MAKING YOUR
OWN SPECIAL SIDE DISHES. To ACCOMPANY A WONDERFUL
PORK TENDERLOIN OR A HAM DINNER, CREATE YOUR OWN
PEACH CHUTNEY. MAKE IT CHUNKY AND EXPERIMENT WITH A
VARIETY OF WINES OR VINEGARS.
1 onion chopped or in rings
1 garlic clove minced
1 tsp. butter
3 or more peaches peeled and chopped or small
can or peaches slightly drained
1/4 cup raisins
Red wine vinegar or apple cider vinegar
2 tbsp. brown sugar
a pinch of cinnamon and cloves and/or nutmeg
Saute onion and garlic in the butter 'til they are just
limp. Add peaches and raisins and vinegar to barely
cover. Add sugar and simmer `til liquid thickens and
peaches are soft. Season with a pinch of spice to

3 cups flour
2 cup white sugar or 1 cup white
and 1 cup brown
1/2 cup cocoa
2 tsp. baking soda
1/2 tsp. salt
3/4 cup oil (or substitute apple sauce)
2 tsp. vinegar
2 tsp. vanilla
2 cups water
Mix all ingredients together well. Pour in a
greased 9 by 13 pan. Bake in oven for 35-40 min-
utes or `til cake tester comes out clean. Cool and
ice.
