WE BOTH ENJOY FAMILY TIMES AND PREPARING SPECIALTIES FOR THEM. THIS RECIPE WAS GIVEN TO ME AS WE EXCHANGED IDEAS FOR OUR GET TOGETHERS. THE FIRST TIME I SERVED IT RANDY MUST HAVE COMMENTED AT LEAST 3 TIMES HOW MUCH HE LOVED THE DRESSING ON THE SALAD. IT WILL BE A GREAT COMPLIMENT TO YOUR SPECIAL MEALS IN THE WEEKS AHEAD. START WITH A BASIC SALAD OF SPINACH GREENS AND/OR MIXED GREENS, CHOPPED CELERY, SLICES OF RED ONION, CRAISINS, TOASTED ALMONDS FOR A REAL TREAT TOASTED IN BROWN SUGAR),AND FETA CHEESE. THE DRESSING WILL BE ENOUGH FOR A VERY LARGE BOWL. 1/2 cup cranberry juice or cup each of orange and cranberry juice 1/2 cup oil 5 tbsp. cider vinegar 2 garlic cloves minced or 1 tsp. garlic powder Salt and pepper to taste 2 tbsp. sugar 1/2 tsp. basil Mix all the ingredients and pour over the salad just before serving the salad. WOW! The dressing will keep for a few days in the fridge if you want to make enough for a couple salads.
