Special recipes for the Christmas holiday season
cooking with memories

A year has come and gone and I am
already submitting recipes for you to enjoy
over the holidays. 1 always look forward to
picking out special recipes. You will no
doubt have some of your own recipes that
mark your family and friend get togethers.
There are great memories attached to the
food! Over the next month you can send
any special recipes you would like to share

(underscore after debby) or drop them off at
the Times -Advocate and Deb Lord will try
to put them in a special feature at the end
of January when we all need a fresh
idea. Enjoy a great start to your

Layered vegetables
OFTEN AT BUSY TIMES LIKE THE HOLIDAYS WE WANT MEALS
WE CAN PUT DISHES IN THE OVEN AND FORGET ABOUT. WE LIKE
TO HAVE THEM UNIQUE BUT FREE OF TOO MUCH HASSLE. HERE
IS A GREAT VEGETABLE YOU CAN PREPARE AHEAD AND PUT IN
THE OVEN TO SERVE UP WITH PORK OR CHICKEN THAT YOU HAVE
PREPARED IN ADVANCE AS WELL. MIX UP THE VEGGIES AS YOU
WOULD LIKE. VERY GOOD!!
Slice like French fries:
Carrot
Turnip
Potato
Onion
Put into a 9 by 13 inch pan. Dot with lots of butter or
margarine. Cover with foil and bake at 400 for 1 hour
stirring occasionally. Try things like sweet potatoes
and varieties of squash as well.
Fresh chutney chicken
WE EAT A LOT OF CHICKEN AND IT IS A UNIVERSALLY LIKED
MEAT. IT MAKES A GOOD SPECIAL DINNER MEAT FOR THIS FEA-
TURE. THE FOLLOWING RECIPE IS ONE I PUT TOGETHER ONE OF
MY EXPERIMENTING DAYS IN THE KITCHEN. I TAKE A RECIPE AND
START ADDING AND CHANGING THE HOW TO OF A GIVEN RECIPE
TO MAKE IT MORE TO MY LIKING. THIS RECIPE EVOLVED! Do
SOME DOCTORING UP OF YOUR OWN!
4 chicken breasts, skinless and boneless
1-16 oz can diced tomatoes
2 apples peeled and chopped
1 onion chopped
1/4 cup green pepper chopped
1/4 cup golden raisins (or currants)
2 tbsp. brown sugar
2 tbsp. lemon juice
1 clove garlic minced
1/2 tsp. cinna-
mon
Lightly salt
and pepper the
chicken breasts
and put in a
400 oven for 15
minutes to pre -
bake. Then mix
the rest of the
ingredients and
pour over the
chicken. Bake
about another
45 minutes
(turning down
the oven to
350) and `til
the vegetables
are tender
crisp and the
chicken cooked.

Frypan bacon and
hashbrown breakfast
TLIIS IS A REGULAR WEEKEND BREAKFAST FOR OUR FAMILY
WIIEN WE WANT A BRUNCH TYPE LATE SATURDAY MORNING
BREAKFAST.
1/2 pound bacon
1/2 package frozen hashbrowns
Eggs
Grated cheddar cheese
Fry the 1/2 pound of bacon in a cast iron or non stick
frypan `til crispy. Add the 1/2 package of frozen hash -
browns to the bacon and its drippings and fry stirring
frequently at medium till hashbrowns are cooked
(about 10 minutes). Make a small indentation in 4
spots in the pan and put an egg without the shell in
each spot. Cover and cook on low medium `til egg is
almost done. Add the cheese over the top and let finish
cooking. Dish up carefully with a spatula. This makes
4 servings or sometimes 5. When I am doing it for
more I use 2 pans or I only cook the bacon and hash -

Chocolate pate
FOR A TRULY OVER THE TOP DESSERT YOU NEED TO GIVE THIS
RECIPE A TRY. WE SERVED IT UP TO A GROUP OF FRIENDS AND
EACH HAD A SMALL PIECE -NO WORDS TO DESCRIBE IT BUT AMAZ-
ING. IT IS RICH, VERY CHOCOLATEY, SMOOTH, OH SO GOOD. IT
CAN BE MADE A DAY AHEAD BUT IS NOT RECOMMENDED TO
FREEZE IT. WOW!
1 cup butter
3 cups semisweet chocolate chips
1 tsp. instant coffee granules, crushed fine
1/2 cup white sugar
1 tsp. vanilla
2 eggs (the recipe calls for these to be uncooked but
we chose to cook them a bit)
1-1/2 cups whipping cream whipped stiff
Line a loaf pan with plastic wrap. Melt butter in a
large saucepan over hot water or on low. Add choco-
late chips and coffee and stir till smooth. Quickly add
in beaten eggs and briefly cook. Do not overheat. Pour
into a large bowl.
Add sugar. Beat well and mix in vanilla. After beat-
ing whipping cream separately fold into chocolate mix-
ture. Turn into pan and cover loosely. Chill for at
least 8 hours. Unmold pate onto platter. Serve with a
fresh made raspberry sauce using frozen raspberries
(15 oz), 1-1/4 cup water, 2 tbsp. sugar and 4 tsp. corn-
starch (Heat, stir constantly till thickening, cool).
Makes about 16 slices.
