Every thanksgiving holds fond memories and makes new ones! I remember
well the feasts with the wonderful cooks in my family. Lots of traditional stuff
and always new recipes for vegetables, salads or desserts. I will give you a lit-
tle mix of recipes to try. The ham is the new twist and the dump cake is one I
have put in once before and have been asked so many times that I need to
repeat it.
CRANBERRY HAM
1 COLLECTED THIS RECIPE FROM A FELLOW COOK WHO TRAINED
ME FOR MY PRESENT JOB. MARY WAS SUCH A GREAT PERSON TO
LEARN THE ROPES BY AS SHE DIDN'T LET ANYTIIING FLAP HER
AND SIIE MADE GREAT FOOD. SHE SUGGESTED THIS TREAT TO
SPICE UP A TRADITIONAL HAM DINNER AND 1 THOUGHT YOU CAN
TRY IT OUT FOR THANKSGIVING!
1 can ginger ale
1 cup cranberry cocktail
1-1/2 cup apple juice
1/2 cup dried cranberries
Heat together for 10 minutes.
Mix together:
1 tbsp. brown sugar
2-3 tbsp. cornstarch
Pinch cinnamon and cloves
Add this mixture to the boiling juice and thicken. Set
aside and add 1 tbsp. butter. Serve up with thick slices
of ham! Thanks Mary for cooking over 10 years for the
dining for seniors program. You were fabulous!
PUMPKIN DUMP CAKE
THIS CAKE IS AN ABSOLUTE MUST TRY FOR THANKSGIVING AND
CHRISTMAS! 1 HAVE SERVED IT A NUMBER OF TIMES TO THE
SENIORS 1 COOK FOR. 1 HAVE BEEN ASKED FOR TI -IE RECIPE TIME
AND AGAIN AND 1 WOULD BE REMISS NOT TO PASS ON TIIIS GREAT
CAKE FOR YOU TO TRY! THOSE THAT HAVE MADE IT CLAIM THE
SAME SUCCESS RATE ON PEOPLE WHO EAT IT! AMAZING!
1 can 28 oz pumpkin
1-12 oz can evaporated milk
3 eggs
3 tsp. cinnamon
1 cup sugar
Mix together the ingredients and then pour into a
greased 9 by 13 inch pan. Over the top sprinkle the
following ingredients:
1 yellow cake mix dry
1/2 to 1 cup chopped walnuts
3/4 cup melted margarine (better with a regular mar-
garine versus a calorie reduced type) Bake at 350
degrees for 50 minutes till set. Let cool and serve with
whipped cream. WOW!
