THE FOLLOWING RECIPE IS ONE 1 ADAPTED OUT OF A NEWSPAPER AND IT HAS A UNIQUE TASTE THAT KEEPS PEOPLE GUESSING! MIX AND ADD THE RAW VEGETABLES YOU ENJOY IN A PASTA SALAD FOR VARIETY. FETA PASTA SALAD 6 cup cooked small pasta (I love to use the mixed coloured rotini) 2 green onions or 1/2 a vadalia onion chopped 1 carrot, peeled and chopped fine 1 small container of cherry tomatoes cut in half 1 cucumber, peeled and diced Small handful of fresh herbs (basil, thyme or cilantro) finely chopped 1 cup feta cheese crumbled 6 tbsp olive oil I -1/2 tbsp balsamic or apple cider vinegar 2 tbsp strawberry jam 1/2 tsp. pepper Mix the salad ingredients in a bowl and toss lightly. Put the dressing ingredients in a blender and puree until quite smooth. Pour over the salad and let sit after stirring for at (east 10 minutes. Enjoy a summery treat!
