HURON — In elemen-
tary school, extra -cur-
ricular activities
include basketball
teams, volleyball
teams, book clubs and
Track and Field.
But Huron
Centennial School has
another team, a team
that helps the students
express their opinions
and learn more about
environmental issues.
The Green Team is a
group of 15 enthusias-
tic students who care
about the environment
and meet to have
group discussions
about issues of con-
cern. They raise
awareness around the
school to encourage
others to be more
environmentally
friendly and try to
keep the school yard
clean.
Teacher Meghan
Lewington at Huron
Centennial works
closely with the Green
Team and supervises
their meetings every
two weeks. Recently
she said they have
been meeting for
weekly picnics.
The team was
formed four years ago
when a new student
came to Huron
Centennial School. The

Team at his previous
school, and students
and teachers alike
thought it was a won-
derful idea to begin a
team here.
In April the team
lead a litterless lunch
campaign for two
weeks leading up to
Earth Day. The team
also weighed garbage
in the classrooms to
see which class creat-
ed the most amounts
of waste. The team is
also collecting
Canadian Tire money,
with hopes to purchase
lawn and garden care
supplies.
The Green Team is
building a Green
Classroom, which will
be a pavilion on the
school grounds. The
teachers want this spe-
cial classroom to be
able to teach the chil-
dren about the envi-
ronment in fun and
interesting ways. This
is also a good place for
children to play and be
protected from the
weather at recesses.
Lewington says the
goal amount of money
needed to build this
classroom is $24,000.
The team is continu-
ing to look for commu-
nity support. Donors
will be acknowledged
on a donor plaque in
the school and will
receive a fully tax -
creditable receipt.
Should you wish to
make a donation con-
tact the school at 233-
3330.
cooking with memories
BY DEBBY WAGLER
FRESH AND LIGHT! IT IS HARD TO BELIEVE THAT I HAVE NOT
PUT THE FOLLOWING RECIPE IN THE PAPER YET! IT HAS BEEN
A REGULAR SUMMER AND BBQ RECIPE FOR A COUPLE OF
YEARS. RANDY JOGGED MY MEMORY OF IT AS HE SUGGESTED
IT FOR MOTHER'S DAY TO ACCOMPANY HIS TERIYAKI
CHICKEN! As I BIT INTO IT I WAS REMINDED HOW MUCH I
REALLY LIKE THESE POTATOES. THEY MAKE A DELICIOUS COLD
POTATO SALAD ON DAY TWO BY JUST ADDING A BIT MORE
FRESH SQUEEZED LEMON.
THIS IS A MUST TRY!!
LEMONY POTATOES
Take 5 med-large new potatoes and scrub and cut into larger
bite sized pieces
Bring to a boil in water and boil till tender.
Drain and place in a serving bowl.
Drizzle with about 2-3 TBSP olive oil
Squeeze I fresh lemon over the potatoes
Add fresh herbs (5 sprigs of thyme, or finely 10-12 chopped
basil leaves)
Sprinkle with freshly ground black pepper
Mix in one small finely chopped red onion
Stir and serve! Add more herbs for flavor and more oil or
lemon for moisture as needed. WOW!

EXETER — The May meeting
of Hurondale W.I. took place
at MacNaughton Park. After a
bountiful lunch prepared by
Marian Dougall's group, the
meeting was called to order by
president Fern Dougall. The
Institute Ode and the Mary
Stewart Collect were repeated
in unison.
A discussion of the Zurich
Fair display took place and it
was decided to participate as
there will be no Exeter Fair
this year.
The London Area Annual
Tweedsmuir Workshop on
August 1 will be held in
Coldstream with Middlesex
North being hosts. A donation
was made to the
Children's
Aid Society
Camp
Fund.
Marilyn Pym
gave a report on the District
Annual that Grand Bend host-
ed on May 18. The District
Picnic is being held on July 4
in Exeter. Hurondale W.I. will
host the event and they chose
MacNaughton Park as the pic-
nic site so all the district can
enjoy the newly built pavilion.
The programme committee
took over the meeting with
games but they were called
because of rain. The next
meeting on June 28 will be a
trip to Stratford to tour the
Stratford Festival Wardrobe
Warehouse.
