RANDY AND I BOTH ENJOY EATING IT WITH JUST A TENDER CRISP COOKING AND THEN A SQUEEZE OF LEMON AND A SHAKE OF BLACK PEPPER. WHEN I WAS GROWING UP THOUGH, WE HAD LOTS IN OUR GARDEN AND WE LEARNED TO LOVE CREAMED ASPARAGUS ON TOAST. WHAT A TREAT EVEN TODAY! CREAMED ASPARAGUS Prepare your asparagus by washing, cutting into 2 inch lengths and then bringing it to a boil and cooking till tender crisp. Drain and set aside. Prepare a white sauce: 1 tbsp. margarine 1 tbsp. flour 1 cup milk Dash of salt 1/2 tsp. pepper Melt marg. in saucepan and slowly add flour and seasoning. Gradually add in milk and cook till thickening . Add in asparagus and heat through. This is thin white sauce, if you want it thicker change the flour and margarine to 2 tbsp., or for very thick white sauce use 3 tbsp. to the same amount of milk. Place the creamed asparagus over toast. We enjoy some grated cheese over the toast for a twist on this simple meal! Enjoy spring! Volunteers add to fullness of life HENSALL - Volunteer Appreciation was the focus this month at Queensway, especially on Wed., April 19 when Martin Gelinas, Doug Oesch and Jeff Miller entertained at the Volunteer Appreciation Party. Volunteers ranging from musicians, friendly visitors, gospel groups, bingo volunteers, meals on wheels drivers, manicurists, card players, entertainers, pastoral care volunteers, to those that help get residents outdoors for walks or wheelchair rides were in attendance. These wonderful people all work together helping residents continue to live life to the fullest. The evening consisted of great music, deli- cious refreshments, and an assortment of door prizes. Jack Youngston and Ann Duskocy won the grand prize of the evening, two tickets to the April 29 Alzheimer Dinner and Silent Auction fundraiser for the Huron County Alzheimer Society at Holmesville's White Carnation. Pastor Scott Stein of Emmanuel Baptist Church in Exeter led worship for residents Tuesday with Belva Fuss as volunteer pianist Baking group met Thursday afternoon and mixed up a batch of delicious gumdrop cookies from a recipe in the Queensway Cookbook. They were enjoyed on Sunday afternoon at the tea party. Residents also benefited from music therapy with Lisa, massage with Lori Burt R.M.T. along with exercises, manicures and opportunities to be outdoors. A bountiful potluck lunch was enjoyed before the business meeting. "The Year In Review" list showed the completed informative year 2005-06 meetings and activities. A favourable fman- cial report was also given. Three new members joined our branch. President Cass Lovie presented several members with "special" membership Women's Institute pins: Delight Rath, Marg Desjardine and Bette Tufts for 10 years of membership, Bertie Keyes 20 year pin, Brenda Love and Donna Lovie 30 year pins , 60 year pin to Verna Lovie and 70 year pin to Catherine Junker. Congratulations ladies for belonging and working for and with the Women's Institute for these years. The 2006-07 executive consists of past president Lois Gill, president Cass Lovie, vice president Marg Desjardine, secretary Brenda Love, and treasurer Elaine Wardell. During the business meeting it was decided to make 50 table favours for the FWIO Conference at Fanshawe College in August. A farm- ers' market may be held weekly in Grand Bend this summer. This project will be discussed more at the next meet- ing. The Huron South annual meeting is at Grand Bend on May 18. Several other important dates were drawn to our attention. In order for Women's Institute to survive into the next century, changes will likely be necessary. Time waits for no person, place or things unless the need for change is investigated and appropriate action is taken as deemed necessary. The successful organization is one that assesses its role continually and evolves through change, keeping its essence intact.
