Enjoy Valentine's Day by cooking together
Valentines is a wonderful time to
spoil one another! The recipes to fol-
low are all special in some way and I
trust that you will enjoy preparing
them and hopefully eating them with
someone sweet, in your life. Randy
and I have tried to come up with lots
of different and fun recipes over the
years often choosing to cook on
Valentine's day rather than face
the crowds.
Cooking together can provide some
interesting times and it can sure help
build some unforgettable memories.
Fortunately for us most of the memo-
ries are great ones! Start your day
off with the scones and end with the
fabulous dessert and Happy
Valentine's Day to you and yours!
BLUEBERRY SCONES
I really played with a recipe to come up with these
wonderful scones. I saw three different recipes that
had things I liked and decided to combine them to
make this batch of blueberry wonders! The one
thing I have learned in creating in the kitchen is
that as you work on a new recipe you have to write
as you go. There is nothing worse than getting a
winning combination but having no idea how you
got there. Enjoy!
2-1/2 cup flour
1 tbsp. baking powder
1/2 tsp. salt
1/2 cup cold butter
1/3 cup sugar
Zest from one orange
1/3 cup buttermilk
1/2 cup half
and half (or milk)
1-1/3 cup
blueberries
Preheat oven to
425. Put flour, baking powder and salt into large bowl
and stir to mix well. Cut in butter with a pastry blender
mixture looks like fine granules. Add sugar and
toss to mix. Add milk and zest and blueberries and stir
with a fork till soft dough forms. Knead the dough on a
floured surface about 10 times and then divide the
cooking with
dough into four parts.
Make four circles with the dough
and then cut each circle into four
wedges. Place wedges slightly
apart on ungreased cookie sheet,
completing four separate circles on
the baking sheet. When they bake
they will grow together.
Sprinkle with granulated sugar and bake at 425 for
12 minutes or till browned on top. Serve with butter
and blueberry jam. WOW!

LAYERED LETTUCE
SALAD
A key to any fancy meal is having recipes that can
be made ahead and taste amazing. The following
salad can be made the night before or a few hours
ahead of your meal and can be served up right in
the bowl you prepare it in.
Make it as big as you need and do the dressing
according to the size of bowl you have.
Layer the ingredients in the following order
(a trifle bowl or a glass bowl shows up nice):
Romaine lettuce prepared in bite size pieces
Celery chopped fine
Green onion chopped fine
Cucumber cut in bite size chunks
A single layer of frozen peas
A layer of cheddar cheese grated
Cover these layers with an equal mix of mayonnaise
and sour cream. Add 1 tsp of white sugar to every cup
of mixture. Make sure you spread the mixture to the
very edges of the bowl.
On top place some more grated cheddar cheese and
crumbled cooked bacon (optional).
Cover with plastic wrap and refrigerate at least four
hours, overnight is fine.
Serve up with salad spoons.
BEEF STROGANOFF
Valentine's Day deserves an elegant entree that is
hearty and rich and satisfying. The following recipe
for beef stroganoff has the winning taste and easy
to prepare combination. You can serve these with
egg noodles or over rice.

1 tbsp. butter
1 small onion chopped
1- 2-1/2 lb sirloin steak, trimmed and cut into
3 by 1 inch strips. (no fat or gristle)
1/2 to 1 lb fresh mushrooms scrubbed and quartered
1 10 oz. can beef bouillon consomme
1 tsp. Worcestershire sauce
1/2 tsp. each of pepper and salt
3/4 cup sour cream
3 tbsp. flour
1/4 cup water or red wine
In a large frying pan saute onion in butter `til limp
but not brown. Add meat strips and sear, turning con-
stantly (not more that five minutes). Remove pan from
burner. Add mushrooms, consomme, Worcestershire
sauce and salt and pepper.
Prepare noodles or rice.
About 5 minutes before serving time, heat contents of
pan to boiling and then stir in sour cream until just
below boiling. Make a smooth paste of the flour and
water or wine and stir in until thickened. Serve over
rice or noodles for a wonderful stroganoff!
BROWNIE CHEESECAKE
Chocolate and Valentine's Day, the perfect ending
to a special event! This dessert was served to us by
good friends and we fell in love with it. It is easy to
prepare and wonderful to eat! A neat way to serve
this up would be to bake the brownie in two heart
shaped pans.
1 pkg (440 g) brownie mix made as directed and
baked in a 9 by 13 pan or two cake pans. Cool.
250 g. pkg. of cream cheese, softened
1/3 cup sugar
1/2 tsp. vanilla extract
1/2 cup whipping cream, whipped stiff
1 can cherry pie filling
2 squares semi -sweet chocolate, melted
In a small mixer bowl combine cream cheese, sugar
and vanilla. Beat 'til smooth. Fold in whipped cream.
Spread cream cheese over baked brownie layer. Top
with cherry pie filling. Chill at least 30 min, drizzle
with melted chocolate. Serve up and enjoy!
