cooking with memories
BY DEBBY WAGLER
OVER THE HOLIDAYS I SPENT A FAIR BIT OF TIME IN THE
KITCHEN. I EXPERIMENTED AND HAD A LOT OF FUN TRYING
NEW RECIPES, CREATING NEW FOOD, AND JUST COOKING
FOR MY FAMILY ALL HOME FOR THE HOLIDAYS. WHEN WE
WERE HAVING A GET TOGETHER WITH A GROUP OF FRIENDS I
KNEW THAT THERE WOULD BE SEVERAL VEGETARIANS AND I
CAREFULLY WROTE OUT THE FOLLOWING RECIPE AS I MADE
IT. IT TURNED OUT TO BE DELICIOUS AND I PASS IT ON TO
YOU AS A COMFORTING PASTA DISH ON A COLD AND
STORMY NIGHT!
STUFFED SHELLS
1 pkg of large shells (meant for stuffing) cooked and
drained
I frozen pkg of spinach thawed and drained
2 tbsp oil
1 garlic clove minced
1 chopped onion
1 rib celery chopped
1/2 red pepper chopped
3 large mushrooms chopped
1 -500 ml cottage cheese
Salt and pepper to taste
1/2 tsp oregano
1 tsp parsley
1/4 cup pasta sauce (use from jar)
3 tbsp parmesan cheese
1 jar of pasta sauce 700 ml ( I used a roasted red pepper
sauce)
200 ml shredded marble cheese
Fry together in oil the garlic through to the mushrooms till
limp. Add the remaining ingredients through to the parmesan
cheese. Stuff the cooked shells and lay in a greased 9 by 13
pan with stuffing up. Cover with the remaining pasta sauce
and the cheese and then cover with a piece of tinfoil well
sprayed with cooking spray. Heat in a 350 oven till bubbly
and then remove tinfoil to brown up the cheese. (All total
about 40-50 minutes). Enjoy!!
