cooking with memories

A FUN LITTLE SNACK IS WATER CHESTNUTS WRAPPED IN
BACON AND BAKED. I FIRST HAD THIS TREAT AT A FRIENDS
AND I LOVED IT. THERE ARE RECIPES ALL AROUND AND
DIFFERENT VARIATIONS OF THE SAME SNACK BUT I THINK
YOU WILL AGREE THAT THIS ONE IS A WINNER.
WATER CHESTNUTS ALL WRAPPED UP
I can of water chestnuts, drained
1/4 cup soya sauce
1/4 cup white or brown sugar
bacon slices, cut in half
toothpicks
Marinate the chestnuts in the soya sauce for about an
hour. Stir them regularly. Remove the water chestnuts
and roll in sugar. Wrap bacon around the chestnut and
secure it with a toothpick. Arrange on a baking sheet and
bake at 400 degree F for 10-20 minutes till bacon is
cooked. Can use your broiler too. Serve up ho from the
oven. Easy but great tasting. Don't forget the drinks for
the holidays! Here is an easy punch that you
can have the ingredients on hand at all times and make up
a batch in a flash! We go through so much punch at our
family get togethers as there are over 30 in the Chester
gang and just about 50 in the Wagler troupe. It is
always important to have lots on hand to drink! Enjoy the
mix and try the variation too.
FOR YEARS WE HAD A TRADITION OF SERVING THE
FOLLOWING RECIPE ON NEWYEAR'S EVE. IT CARRIES MANY
FOND MEMORIES FOR ME AS WE PREPARED A SPECIAL MEAL IN
OUR HOME AND WATCHED THE NEWYEAR COME IN! WE
OFTEN HAD MEATBALLS WITH THIS AS WELL BUT I HAVE
SHARED THAT RECIPE BEFORE. THIS IS A GREAT VARIATION OF
A TRADITIONAL BAKED BEAN. GIVE IT A TRY.
SWEET AND SOUR BAKED BEANS
8 bacon slices fried till crisp (drain and crumble)
4 large onions, sliced in rings
1/2-1 cup brown sugar
1 tsp dry mustard
1/2 tsp garlic powder
1 tsp salt
1/2 cup cider vinegar
2 (15 oz) cans dried lima beans drained (or soak and
cook your own)
15 oz can green lima beans drained
15 oz dark red kidney beans drained
II oz new England style baked beans or pork and beans
Place onions in skillet and add sugar, mustard, garlic powder,
salt, vinegar. Cook 20 min. covered. Add to beans. Add bacon.
Pour into Targe casserole dish. Bake at 350 for about I hour.
So good!! Happy New Year to You and Your Family. I look
forward to sharing more recipes with you in the new year.
