FOAMY CABBAGE SALAD
SPECIAL HOLIDAYS DESERVE SPECIAL SALADS. THE FOLLOWING
RECIPE IS ONE VERY SIMILAR TO ONE USED AT MY WEDDING
RECEPTION. IT IS A UNIQUE TWIST ON THE TRADITIONAL
COLESLAW OF THE TURKEY DINNER. IT IS A MUST TRY!
2 cups shredded cabbage
3 bananas diced
1 cup crushed pineapple drained
1 cup sweet cherries or oranges drained or fresh
I cup chopped nuts
1 cup small marshmallows
1 cup mayonnaise
1 cup whipping cream whipped stiff or dream whip
prepared as package directs
Combine cabbage, fruit nuts and marshmallows. Add whip
cream and mayonnaise. Mix and stand in refrigerator for at
least I hour before serving. WOW!
SAUCY ZUCCHINI
THERE IS SOMETHING WONDERFUL ABOUT PREPARING
VEGGIES WITH A FLAIR FOR THE SPECIAL MEALS WE PREPARE
OVER THE HOLIDAYS. I WANTED TO INCLUDE TWO
VEGETABLE DISHES TO HELP ENCOURAGE YOU TO TRY OUT
SOMETHING NEW! THIS FIRST
RECIPE CAME WHEN I WAS TRAVELING FOR A SUMMER AS A
BACKYARD BIBLE CLUB LEADER. MY HOST FAMILY SERVED
THIS UP AND I COULDN'T EAT ENOUGH. I TOOK THE RECIPE
HOME BECAUSE MY DAD'S HUGE GARDEN ALWAYS MADE
SURE WE HAD OODLES OF ZUCCHINI!
4 cups sliced zucchini
1 cup sliced onions
2 tbsp butter
2 tbsp flour
I tsp each of salt and pepper
1 cup milk
1/2 cup shredded sharp cheese
1/2 cup bread crumbs buttered
Tender crisp cook the zucchini and onions in a small amount
of water. Drain. Make a white sauce by melting the butter,
adding the flour and seasonings and then slowly adding the
milk while cooking till thickening. Combine with zucchini in a
casserole dish. Top with cheese and bread crumbs. Bake at
350 or 25 minutes. Ver ood!
