(photo/Nina Van Lieshout) cooking with memories BY DEBBY WAGLER As YOU HEAD INTO DECEMBER YOU MAY BE PANICKING BECAUSE YOU SIGNED UP FOR THE COOKIE EXCHANGE! How ARE YOU GOING TO FIND A RECIPE LET ALONE THE TIME TO MAKE 20 DOZEN COOKIES?! REST EASY, I HAVE A GREAT VARIATION OF THE TRADITIONAL CHOCOLATE CHIP COOKIE THAT HAS A HINT OF ALMOND AND A MOUTHFUL OF CHUNKY, DELICIOUS BITES. I USE THIS RECIPE FAITHFULLY IN MY CHRISTMAS BAKING BUSINESS, AS A MATTER OF FACT I HAVE ALREADY MADE MY FIRST 200 COOKIES, THE FIRST COOKIES FOR 2005, TO BE MADE AND FROZEN. IT IS A GREAT FREEZER RECIPE, A SINGLE BATCH MAKES ABOUT 100 SMALLER SIZED COOKIES AND THEY ARE YUMMY! ENJOY! CHIPS GALORE COOKIES 1 cup butter softened 3/4 cup each white and brown sugar 2 eggs 1 tbsp almond extract 2-1/4 cup flour 1 tsp salt I-1/2 cups semisweet chocolate chips 1-1/2 cups milk chocolate chips 1-1/2 cups white chocolate chips 1-1/2 cups pecans 1-1/2 cups walnuts Cream the butter with both sugars. Add eggs and almond extract and blend well. Gradually add flour and salt and beat till well combined. Stir in the chocolate chips and the nuts. The recipe will be very chunky and it does take a little arm muscle to mix well. Spoon onto well greased cookie sheets and bake about 15 minutes in an oven set at 325. The cookies should be browning nicely around the edges. Let sit for a minute on the tray and then lift and set on a cooling rack. Cool. Store in an airtight container with wax paper between layers, and in the freezer till you want a few for a tray. Shelf life when not frozen is just 2 or 3 days at room temperature, although they are much better pulled out of freezer as needed. What a wonderful mouthful!
