Enjoy your meal but take time to be thankful
Thanksgiving is a wonderful time to sit back and enjoy family and friends without all the frenzy of Christmas. It is
often a great time to visit out of town as travel is better! We usually spend a bit of Thanksgiving weekend with both
sides of our family. We are moving towards a less traditional type of meal. Our extended families are getting very
large and to cook the turkey and fixings gets to be a major undertaking. This year in the special feature I have tried
to put a variety of accompaniments to augment any meal you might be having -whether it be the traditional or the
potluck. Have a wonderful time with your family and friends. Take time to reflect and be thankful!!
CHEESY BISCUITS
As I AM NOW COOKING FOR A DINING FOR SENIORS PROGRAM IN
OUR AREA, I ENJOY THE CHALLENGE OF MAKING FOOD THAT
TASTES GREAT, LOOKS GOOD AND IS HEALTHIER THAN THE ORIGI-
NAL RECIPE. I AM LEARNING TO MODIFY A LOT OF MY OLD
STANDBY RECIPES. HERE IS A FAVORITE REMADE RECIPE THAT
PRODUCES LIGHT, WONDERFUL TASTING BISCUITS.
1-1/4 cups white flour
3/4 cups whole wheat flour
1/2 tsp baking soda
4 tsp baking powder
1/2 tsp salt
3 TBSP white sugar
1/4 cup shortening
1 cup buttermilk
1 cup grated old cheddar cheese (optional)
Preheat oven to 350 degrees. In a mixing bowl place
the first six ingredients and toss with a fork. Cut in
with a pastry cutter the shortening and then the
cheese. Mix in the buttermilk with the fork and then
put dough on a floured surface. Knead it 8 to 10 times.
Pat out to about a 1/2 inch thickness. Cut with a glass
and put on a cooking sheet.
Bake in oven for 10-15 minutes. For a change add 1
cup raisins in place of the cheese, a 1/2 tsp of cinna-
mon and serve up a breakfast biscuit. Great idea for an
easy morning brunch! Enjoy.
HASHBROWN BAKE
WE ALL LIKE TO HAVE A MAKE AHEAD AND EASY BAKE RECIPE
TO TAKE ALONG TO THE POTLUCK OR TO ACCOMPANY A MEAL
WITH COMPANY. THE FOLLOWING RECIPE IS ONE (WITH SLIGHT
ADAPTATIONS) THAT I GOT FROM MARY, MY TRAINER FOR THE
PRESENT JOB I AM WORKING AT! I HOPE YOU ENJOY THE CREAMY
POTATOES.
1 kg package of frozen hashbrowns
1 500 ml fat free sour cream
1 can of cream of chicken soup
1/2 to 1 cup finely chopped onions
3 ribs celery finely chopped (optional)
1/4 cup melted margarine
1to 2 cup cheese grated
Mix all ingredients together, put into a 11 by 7 or 9
by 13 inch greased pan and bake in a 350 oven for at
least an hour. I often cover it with tinfoil and then
uncover it for the last 15 minutes of baking time.
These are great with crushed potato chips on top (sour
cream and onion are Mary's favorite!) If you find the
mix is a bit dry just add a small bit of milk before bak-
ing. Enjoy.
CREAMY JELLO
As I WAS LOOKING FOR AN EASY JELLO SALAD FOR A SALAD
LUNCHEON I DISCOVERED THIS SIMPLE RECIPE THAT CAN BE MADE
WITH JUST ABOUT ANY FLAVOR OF JELLO. IT IS FABULOUS TAST-
ING, SMOOTH AND CREAMY. I PARTICULARLY LOVED IT WITH
RASPBERRY FLAVORED JELLO. PREPARE A DAY AHEAD. AND IF
YOU ARE REALLY AMBITIOUS TRY MAKING IT IN LAYERS IN 2 TRI-
FLE BOWLS LETTING EACH LAYER SET BEFORE APPLYING THE
NEXT.
1 pkg of instant jello powder
(try orange, raspberry, strawberry or lime)
1 cup boiling water
1 500 ml container of fat free sourcream
Mix the jello with the boiling water till dissolved and
then add in the sour cream, stirring until completely
blended. Pour into a small glass bowl and let set
overnight. Easy but oh so good!! Try this recipe for
sure!
PUMPKIN SQUARES
IT IS FUN TO SERVE UP A PUMPKIN DESSERT BUT WITH A TWIST
ON THE TRADITIONAL PIE! THE FOLLOWING RECIPE IS VERY
MOIST AND CAN BE SERVED UP WITH A FRESH DOLLOP OF
WHIPPED CREAM TO MAKE A SATISFYING DESSERT. IT CAN ALSO
BE FROSTED WITH A BASIC CREAM CHEESE ICING. SERVE THE
SQUARE CHILLED
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
14 oz can pumpkin
Cream butter and sugar together and then beat in
eggs 1 at a time. Slowly beat in pumpkin.
1 cup flour
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ginger
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
Add to pumpkin mixture and stir. Put into a greased
9 by 13 inch pan. Bake at 350 oven for about 25 min-
utes or till a toothpick comes out clean. Cool. Serve
with whipped cream or cream cheese icing. Enjoy.

Local `celebrities' heading to jail for a good cause
GODERICH — Are you one of Huron County's 'Most
Wanted?' There are a few who reside in and around
South Huron and on Oct. 4, they will be whisked away
for a court appearance in Goderich.
This is, of course, all in fun and the goal is to raise
$20,000 to be shared between the Kidney Foundation
of Canada and Huron County Crime Stoppers.
On Oct. 4, these two organizations are holding their
`Round Up For Research' event, more commonly
known as a 'Jail and Bail.' During this event, local
celebrities donate their time and often their money to
help make this a successful fundraiser.
There are eight participants from the South Huron
area, including Exeter's White Wonder, who will be

arrested for having committed various crimes.
Once arrested, participants will be taken to the
Suncoast Mall in Goderich where they will be placed in
jail awaiting their court appearance. When their name
is called to appear before the judge, they will be given
an opportunity to present their case.
The judge will then set their bail and if enough
pledges have been collected in advance, they will be
free to go.
If not, they will have to work the phone lines, gather-
ing more pledges to make bail.

Communion in Hensall

HENSALL CORRESPONDENT
HENSALL - Hensall United Church service began
with welcome and announcements and the passing of
the peace. The minister was Peter Challen, his mes-
sage was "Paul's journal on the road." The organist
was Bill Gibson. Evaline McAllister was the greeter.
Donna Hamather looked after the nursery. Glenn
Hayter was the reader and candle lighter. The ser-
vice closed with commissioning, benediction, and
choral amen.
October 1 is Worldwide Communion Sunday.
Communion will be served by Rev. Stan McDonald.
Hensall Community Development Action
Committee volunteers will be picking up leaves in
Hensall on Mondays, Wednesdays and Fridays. Leaf
pick-up will begin when the leaves start to fall.
At Carmel Presbyterian Church Rev. Ken Knight
was the guest minister with Joyce Pepper playing the
organ. The offering was received by Robert Bell and
Frank Varley. The service closed with benediction
and choral amen.
Next Sunday will be Communion with Rev. Gwen
Brown.
