12 Exeter Times -Advocate Wednesday, September 13, 2006 cooking with memories BY DEBBY WAGLER As WE HEAD INTO THE FALL IT IS GREAT TO GET BACK INTO BAKING JUST TO WARM UP OUR HOUSES!! THERE IS SOMETHING SO SPECIAL ABOUT PEOPLE COMING HOME TO THE SMELLS OF BAKING. THE NEXT FEW WEEKS I HAVE A FEW RECIPES THAT I WANT TO PUT IN THAT WILL SERVE THE SWEET TOOTH OF YOUR HOME. THE FIRST RECIPE IS ONE THAT I ADAPTED TO MAKE FOR THE DINING FOR SENIORS PROGRAMS. I'VE BEEN ASKED FOR THE RECIPE AND THOUGHT WE SHOULD INCLUDE IT IN THE COLUMN. ENJOY! RAISIN OAT BARS 1 cup white sugar 2-1/2 tbsp cornstarch 1 tsp cinnamon 3 beaten eggs 1-1/2 cups low fat or fat free sour cream 2 cups raisins Crumb Mixture: 1 cup white flour 3/4 cup whole wheat flour 1-3/4 cup oatmeal 1 cup brown sugar 1 tsp baking soda 1/2 tsp salt 1 cup cold margarine In a heavy saucepan combine the sugar, cornstarch and cinnamon. Stir in eggs, sour cream and raisins. Cook and stir over medium heat for 8-10 minutes or till nicely thickening. Meanwhile in a bowl combine the crumb mixture cutting in the margarine till crumbly. Firmly press 3- 1/2 cups of crumb mixture into a greased 9 by 13 inch pan Spread with warm raisin filling and sprinkle remaining crumb mixture over the top. Bake at 350 for 25-30 min till golden brown. Cool and cut into bars. Refrigerate leftovers. Crediton UCW meets Thursday CREDITON - The monthly meeting of the UCW of Zion United Church in Crediton will be held tomorrow night, Thurs., Sept. 14 at 8 p.m. The special guest speaker will be Dr. Kate Partridge of Crediton. She is a psychologist out of a London office and South Huron Hospital in Exeter. The roll call will be to bring a wash cloth for the church kitchen. New members and visitors are always welcome. An open house to celebrate the 60th wedding anniver- sary of Earl and Jean Neil will be held Sun., Sept. 27 at 2 p.m. in the church basement. Warmest congratulations to Jean and Earl. On Sun., Sept. 24 after the morning church service, there will be a coffee hour in support of the Alzheimer's Society. Please speak to Brandi Shaw if you can help. The same evening an Ecumenical Gospel sing will be held at 6 p.m. at Crediton Zion United Church, the doors open at 5 p.m. and the singing begins an hour later. Ushers and helpers are needed to take up an offering and to assist with greeting. Upcoming dates to remember are Sun., Oct. 7 for World Wide Communion; Fri., Oct. 13 for the first get-together for bible study; a service of Baptism on Sun., Oct. 29 and the annual roast beef dinner held in the evening. Fifty-five members and guests sat down to a bountiful potluck supper at 6 p.m. President Shirley Kirk welcomed all and read a story of "fall". Happy Birthday was sung to Marian Dougall, Donna Webster and Ray and Marg Consitt. Celebrating an anniversary was Ray and June Hodgson. Claire and Jeanene Hayter were congratulated on their recent wedding. Business meeting was held and Jim Bearss reported on Senior Advisory upcoming events. Western Jamboree is Sept. 16 from 1:30 - 7 p.m. All are welcome. We enjoyed Jim's humorous stories. Shirley gave the results of the recent survey on gambling we were asked to participate in. Mildred Chalmers was chair- person for the program. She read "Perspective" and "The Apron". Mildred and June Hodgson attended the USO Convention in August and brought back hi -lights from the convention and workshops on Diabetes and Medications that they attended. Door prize winners were Helen Webber, Ruth Insley, Bev Morgan, Lynda Hokansson, Gerald Dearing and Mary Horn. Share The Wealth winners were Mary Baechler, Ruth Insley, Madeline Switzer, Anne Cottel, Mary Horn, Sam Skinner, Lillian Mathers and Ray Consitt. Entertainment for the evening was by Lil Audrey. We enjoyed the many tunes of the 50's and 60's and the country music that Audrey so capably played and sang for us. Seniors Euchreama is Sept. 29 at the legion. Everyone is invited to come and enjoy the cards and lunch. Next meeting is Oct. 3. We invite all seniors to come and join us.
