WE HAVE HAD SUN, RAIN, HOLIDAYS, GARDEN FOOD AND WORK, AND OF COURSE FABULOUS SUMMER FOOD! I HAVE TAKEN ON A NEW JOB AND HAVE ENJOYED THE CHALLENGE OF COOKING SUMMER FOOD FOR SENIORS IN THE DINING FOR SENIORS PROGRAMS OF EXETER, ZURICH AND GRAND BEND. I HAVE FOUND A COUPLE OF FABULOUS DESSERTS THAT I THOUGHT DESERVED TO BE IN THE PAPER THEY WERE SO EASY AND SO GOOD! Ginger Pear Light Cheesecake Finely crushed ginger snaps or cinnamon crisps I pkg. light cream cheese 1/4 cup pear juice (drained from can of pears) 1 tub of light cool whipped topping (slightly thawed) Can of pears Beat `til smooth the cream cheese and pear juice. Fold in whipped topping and let set in fridge for at least one hour. To assemble place several tablespoons on crushed crumbs in the bottom of an individual serving dish. Put a dollop of the cream cheese mixture. Sprinkle with more crumbs and then place 3- 4 slices of pear on the top. What a fabulous dessert! Enjoy. Drowning in Grand Bend GRAND BEND — A 20 -year-old Saskatoon woman drowned Sunday night at Grand Bend beach after jumping in waves a metre high with a friend. Elizabeth Tse and her friend were hanging on to each other, jumping into the waves when one wave separated the pair, according to The London Free Press. Tse fell below the surface as her friend looked for her. She then shouted for help, some- one on the beach called 9-1-1. At about 9 p.m. police, fire and ambulance crews arrived, search- ing the shoreline with the help of Tse's friends. Tse's body was found half an hour later on shore, almost 200 metres west of where Tse and her friend were originally. CPR was administered by emer- gency crews. Tse was then taken to South Huron Hospital in Exeter where she was pronounced dead. An autopsy was conducted Tuesday. Police are warning the public to wear life jackets in high waves and remember there is a strong under- tow when waves are breaking on the shore. POLICE BRIEF Break-in LUCAN-BIDDULPH — Middlesex OPP responded to a break and enter in progress to a Bell Canada Utility building on Richmond Street in Lucan-Biddulph Aug. 10. The OPP had received a report of a sus- picious person near the building. An officer found a male in the area and placed him under arrest. A 21 - year -old London man has been charged with several charges including break and enter, theft, possession of property obtained by crime and being intoxicated in a public place. $10,000 tourism announcement "Shakespeare to the Shoreline," a tourism program aiming to improve self -guided tours for Ontarians from Shakespeare to Grand Bend got a big boost Aug. 17.
