HomeMy WebLinkAboutThe Times Advocate, 2005-09-28, Page 1818 Exeter Times–Advocate Wednesday,September 28, 2005 Back -to -school snacks and healthy choices There are many fond memories I have of going back to school and of sending my own kids back to school. New clothes, lunch pails, backpacks, shoes and school supplies. When our children were small it was the group picture on the way out the door! Now back -to -school routine means boring lunches again (it takes me about three weeks to have lunch meat in the house before TACO DIP 1-500 ml of sour cream (I use fat free) 1 pkg of taco seasoning 1 jar of salsa on hand 2 cups of grated cheddar cheese Optional toppings: shredded lettuce, chopped tomatoes, and green onions diced Mix the sour cream with the package of seasoning till well combined. Carefully put it into two 8 -inch pie plates or cake pans making it cover the bottom of the pan smoothly. Spoon small amounts of salsa over the sour cream lightly spreading it to the edges. Layer the cheese on top. If you choose, put the other toppings over the cheese. Cover and refrigerate till ready to eat and serve with tortilla chips. This is a great dip for teen nights and other munchie parties! EASY 'PIZZA' BUNS Hamburg buns Ketchup Grated cheese or cheese slices Your choice of ham, crisp bacon, pepperoni or tuna as well as mushrooms, onions, peppers and/or pineapple Spread hamburg buns lightly with ketchup and then put your choice of toppings on the bun. Cover the top- pings with cheese and then place under the broiler in your oven till lightly toasted. This is a great snack for the kids and they can learn to make it themselves. It can even be microwaved. David loves tuna buns and Josh loves just plain cheese and ketchup. Tuesday), early mornings (band and tennis) and busyness! This is why I decided to do a BACK -TO -SCHOOL IDEA FEATURE! You may need some after school snack ideas or some good lunch pail food. All the following recipes are tried and true and many of them have been with our family for years and years. Hopefully you will try them all! Enjoy!! BLUEBERRYAPPLE MUFFINS 1-3/4 cup flour 3 tsp baking powder 1/2 tsp salt 1/4 cup butter or margarine 1/2 cup white sugar 3/4 tsp cinnamon 1 egg 3/4 cup milk 1 tsp vanilla 1 cup frozen or fresh blueberries tossed in 1 tbsp flour, 2-3 peeled and grated apples Stir flour, baking powder, salt and cinnamon togeth- er in a large bowl. In another bowl cream together sugar and butter. Beat in egg and then mix in milk and vanilla. Pour into the dry ingredients and stir till just moist. Batter can be a bit lumpy. Add the blue- berries and apple and mix lightly. Fill greased muffin tins about 1/2 full. Bake in 400 degree oven for 20-25 minutes until nicely browned. You can substitute applesauce for the some of the but- ter and although the muffin may be slightly more dense it is moist and has great flavour with less fat. GINGER COOKIES 1 cup butter 1-1/2 cup sugar 1 egg 2 tbsp corn syrup 1/2 cup molasses Beat on low till well blended. Stir in the following: 3 cups flour 2 tsp baking soda 2 tsp cinnamon 1 tsp ginger 1/4 tsp cloves 1/2 tsp salt When well mixed let chill for an hour. Roll the dough into balls and then roll the cookie into white sugar. Put on baking sheets and bake 10-14 minutes at 375 degrees. The cookies flatten as they bake. This cookie is a great keeper and is the best tasting ginger cookie recipe 1 have found. A single batch can make about 100 small cookies. I use this recipe for my Christmas baking trays and it is such a nice switch from chocolate! A super lunch box stuffer. e Enjoy these Back -to -School Days as the years pass all too quickly and you start taking them farther away to go back to school!! We have two away this fall and our table is adjusting to the smaller number of guests! j Morrison Dam Dedication Service Youth charged EXETER — Last Sept. 1 a motorist contacted OPP over two youths on a tractor that came close to causing an accident in South Huron. An officer came across the stopped tractor on Morrison Line, south of Exeter. One youth was sitting on the driver's seat while a second youth was standing outside the cab. The officer approached the two youths and found some open alco- hol inside the cab of the tractor. The driver was found with alcohol on his breath and given a roadside test indicating a fail. The youth was arrested and taken for breath tests determining the youth had approximately two times the legal limit The driver of the tractor a 16 - year -old male from North Middlesex has been charged with care and control of a motor vehicle with over 80 mgs and a liquor violation. He will attend youth court in Goderich on November 10th. The second youth also 16 years of age from the same area is charged with a liquor and trespass violation. Haskett and Son and Hopper Hockey Funeral Homes in Exeter and Lucan.The afternoon, attended by 410 people, included a prayer service by Father Ray Lawhead.This is the first year of involvement for C. Haskett and Hopper Hockey. Colin Haskett said he was impressed with Sunday's turnout and said it was an honour to be a part of the dedication service.Trees will be planted throughout the Morrison Dam area in memory of those who have died since January 2004. Lawhead called the service a celebration of life.
