cooking with memories
BY DEBBY WAGLER
FAITH -ANNE AND I HAVE EXPERIMENTED WITH A LOT OF
CHICKEN, TRYING TO FIND THE PERFECT MARINADE. WE
BOTH ENJOY A LEMON AND HERB COMBINATION AND OVER
THE SUMMER WE HAVE TRIED TO GET THE RIGHT MIX! WE
DID IT ON OUR HOLIDAYS AND WE CAN NOW BOAST AN
AWESOME CHICKEN MARINADE. ONE TRICK IN OUR
ATTEMPTS THAT HAS BROUGHT MORE FLAVOUR WAS TO CUT
THE SKINLESS, BONELESS CHICKEN BREAST OR THIGH IN HALF.
MORE FLAVOUR IS ABSORBED AND YOU CAN PROCEED TO
COOK IT ON SKEWERS OR IN A GRILL BASKET. WITH THE
WARM WEATHER STILL HOLDING I THOUGHT I WOULD
SHARE THIS ONE LAST MARINADE WITH YOU. ENJOY!
LEMON, GARLIC, GINGERAND
THYME MARINADE
4 chicken breasts
1 tsp grated lemon zest
3 tbsp fresh squeezed lemon juice
1 tbsp canola oil
2 minced garlic cloves
1 tsp ground ginger
1/2 tsp salt
1/2 tsp pepper
2 tbsp chopped fresh thyme
Mix marinade ingredients together and set aside a small bit
for the final basting when grilling your chicken. Put the
remainder of the marinade in a ziploc bag with the chicken
and allow at least 4 hours in the refrigerator. Remove the
meat, discard the marinade and cook on the BBQ. A great
recipe to cook the chicken and then use it cold in pasta or
lettuce salads.
