cooking with memories

I HAVE BEEN AWAY ON HOLIDAYS AT RANDY'S SISTER'S
COTTAGE AND ONCE AGAIN WE HAD FUN IN THE KITCHEN.
WE DID A LOT OF EXPERIMENTING AND RECIPE SCANNING
AND THEN PROCEEDED TO HAVE SOME AWESOME GOURMET
TYPE MEALS. THE FOLLOWING RECIPE IS ONE OF THE
TRYOUTS THAT WAS A REAL NEW TWIST ON SCALLOPED
POTATOES. THE POTATOES WERE WONDERFUL! THANKS MEL
FOR SHARING SO MANY GOOD TIMES IN THE KITCHEN WITH
ME!
SIMPLE BAKED POTATOES
scrubbed and sliced new potatoes
sliced red onion
sliced tomato
garlic cloves
fresh herbs (thyme, parsley)
grated cheese
olive oil
Lightly saute onion slices and garlic in a small bit of oil `til just
tender, add fresh herbs to the mix. Then layer starting with
onion, herbs and garlic, then potato, then tomato and lastly
cheese. Do the layering twice in a well greased pan. Drizzle
olive oil over the whole pan scantly. Prepare as much as
needed for the number you are serving. Bake in 350 deg.
oven covered with tinfoil `til last 10 minutes. Serve hot and
enjoy. We used a combination of old cheddar and asiago
cheese. WOW!
