Usborne Township was named after one of the first directors of the Canada Company, Henry Usborne who had great faith in the investment potentials of Canada. This Township is bounded on the north by the Township of Tuckersmith, on the east by the Township of Hibbert, Fullarton and Blanshard, all in the County of Perth; on the south by the Township of Biddulph, in the County of Middlesex; and on the west by the Township of Stephen and Hay. It has an irregular shape and contains 42,681 acres. Until 1845 it had only 283 inhabitants but increased to 1,484 by 1852. The major crop was wheat, then turnips, oats, potatoes, peas and hay. Sheep were important livestock, followed by hogs and cows and a considerable dairy industry was developed in butter and cheese. For many years one of the staple crops in Usborne was maple sugar and maple syrup. The early settlers in the township were James Willis and William McConnell and who settled in the area that was later called Exeter and largely responsible for the original development of this settlement. Long before Exeter, another area called Devon, which was 3 miles to the south of Exeter was developed. In this area a Devonshire man, John Balkwill, cleared four acres about a little over a mile south of Exeter. He returned to England and was so enthusiastic about the prospects of a new and more prosperous life in the Huron Tract that he attempted very successfully to convince a good num- ber of his friends and neighbours to come out to this country. The first of these was his brother-in-law, William May, who arrived with his family in 1832 and registered his land in 1833. Between 1833 and 1835 several of Thomas Balkwill's brothers came out and took up land on both the Usborne and Stephen sides of the London Road. Another Devonshire man, George Snell, settled in Usborne. A brother of James Balkwill who arrived in 1835 was so good in urging new settlers to take up land in this area that the Canada Company made him its constable and agent for the Usborne Township District. The kids are starving. A cheeseburger and fries would be the easy fix. But let's face it: a Happy Meal is not necessarily a healthy meal. You need nutri- tious food you can grab fast, whether you're on the road or have just walked into the house. It's not an impossible dream -- at least, not with a little planning and a few essential items in your fridge or pantry, say experts. Before you duck into the drive-through, try their light- ning -fast tricks for healthy meals. Healthy Meals on Wheels To avoid fast-food temptations, keep an 8x12 -inch insulated cooler tucked in the car's back seat. It's like having a mini -kitchen in your car. Pack food for every member of the family -- bottled water, 16 oz bottles of chocolate milk, juices, nuts, seeds, pretzels, yogurt, fruit, cereal, health bars. "It saves time, money, and it saves fat and calories. It keeps from eating mall food or hitting the drive-through for French fries. Healthy Meals at Home At home, you can assemble a healthy meal in about the time it takes you to scoot through the drive-through. Convenience foods -- anything frozen, canned, pre-cut, pre -washed, and pre -bagged -- is fair game for healthy meals. "Try any new product that comes out. Use every- thing to your advantage. "Some vegetarian burgers are very good, but don't go for turkey burgers unless you have a butcher grind the meat especially for you, ground turkey often contains a lot of fat. The French concept of accoutrement -- accessorizing - - is key for healthy meals. That means a main dish with lots of side dishes, like a nice salad plus four or five veg- etables. Your family can get full, they're eating a lot of vegetables, and there are plenty of choices. The kid who doesn't like the corn can eat something else. Here are a few dinner suggestions: Little Dippers: Set out a "party tray" of vegetables and fruits for your family and mix it up with interesting, lower -fat dips -- even melted chocolate and strawberries once in a while for dessert. Freezer -to -Table Main Dish: For a dinner that's ready in seven or eight minutes, start with a frozen healthy meal like Healthy Choice or Lean Cuisine, they don't give you a lot of meat, which is good. If you use a frozen -in - the -bag vegetable dinner, don't add much meat; keep it the size of your palm, she adds. "Some huge chicken breasts are enough for two servings. Speedy Side Dishes: Keep frozen, canned, or fresh veg- gies on hand to round out a healthy meal. A lot of frozen vegetables are frozen fresh, right on the spot, so they still have all the nutrients. Canned vegetables are also good. And you need some fresh vegetables, like celery, carrots, and tomatoes and fresh fruits like oranges, lemons, limes, grapefruit, and grapes." Quick Baked Potato: It's a perfect addition to a healthy meal, and you can get oven -baked taste in less time than you think Preheat the oven to 350 degrees. Wash the potato, then microwave on high for about 4 minutes. Rinse it again so it's wet. Finish baking in oven for 10 to 15 minutes. "It's nice and crispy outside, with the tex- ture of an oven -baked potato inside. THE LOST CHAPTER OF GENESIS Adam was hanging around the garden of Eden feeling very lonely. Then Adam asked, "What can I get for a rib?" Of course, the rest is history... It's Rodeo Time Again Dear Editor: Get ready to Rodeo in Exeter! Don't miss the action of the 9th Annual Exeter Rodeo at the South Huron Recreation Centre on August 5, 6 & 7th. The Dodge Truck Rodeo is fully sanctioned by the Canadian Cowboy Association. In it's eighth year, the Dodge Rodeo Tour has been growing rapidly and the Exeter Rodeo has followed this growth being one of the largest ones in Ontario and on the Dodge Tour. The 2nd Annual South Huron Trail Run will take place on Sunday morning and is one run in a series of runs that will be taking place in several different areas. The 2 km run will begin at 9:00 am. and the 8 km run will begin at 9:30 am. The race will start and end at the South Huron Recreation Centre and run- ners will enjoy the scenic route along the South Huron Trail (Exeter to Morrison Dam). Get fit and enjoy the experience! At a July 11th informal meeting (requested by coun- cil) with the Hoffmans, Neighbours, Huron County Planning & Development Department, Dignitaries, Kipfers and a Yamaha Representative; this commercial business stated that it would allow PARKING for the Hoffman's Funeral Home. Funeral parking is a problem and is desperately need- ed, as a number of accidents have come close and have happened in the pact ...plus with parking on private -proper- -! ty ...WHY then, would not this "property" be maintained for vor Funeral Parking? Also, the neighbours "respect" visitations... and funeral procedures ...and refrain from lawn mowing, snowblowing. . .and excess noise ...the question is - Would this TYPE of commercial business (servicing snowmobiles and motorcycles) SHUT DOWN in respect for visitations and funerals? The OUT -OF -BUSINESS sign could come quickly and THAT SPELLS TROUBLE! Also, the plans for this new building for commercial use looked good, but the siding on this building could be rubies and diamonds and the lot paved in gold but the bottom line - it would still be a commercial business and we, meaning the neighbours VOTE for residential for ALL CON- CERNS... present and future.
