There was always a three-legged race, the shoe scram- ble, a potato sack race, egg or balloon tossing contest and water- melon seed spitting! Of course, we always ate together. When I decided to spotlight some features throughout the year the summer picnic had to be one. Thank you to all who entered the 'best potato salad ever ' contest. I had a total of 11 judges taste testing and it was great fun for me and them! The winning recipe goes to CHRIS TURNER of Exeter! Honoirable mentions go to Lou Dixon of Centralia and Randi MacDonald of cooking with memories BY DEBBY WAGLER Best Potato Salad Ever by Chris Turner 6 cups boiled and cooled potatoes cubed 4 chopped hard-boiled eggs 4 green onions chopped 1 large onion chopped 1 red pepper chopped fine 1/2 cup chopped celery Mix together in large bowl and add dressing as follows: 1 cup (at least) of salad dressing or mayonnaise 1 Tbsp prepared mustard 2 1/2 Tbsp brown sugar 2 tsp. malt or cider vinegar 1 tsp basil (6 leaves) 1 Tbsp parsley 1/2 tsp celery salt 1 tsp pepper 1 1/2 tsp salt Exeter. Along with the winning recipe for potato salad, I am including a great drink that our friends that we have holidayed with for 15 years created, a marvellous cookie recipe for big batches and a recipe I have created in my kitchen in one of my adventurous moods for a new twist to marinated veg- Marinating veggies with a twist Mix together : 1 cup apple cider vinegar 1/2 cup olive oil 2 Tbsp honey 3 fresh basil leaves 1 sprig of parsley 3 stems of thyme 1/2 tsp black pepper 1/2 tsp garlic salt 2 tsp strawberry jam Cut 1 red pepper, 1 cup each of cauliflower, broc- coli and carrots, 1 onion in rings and 1 small zuc- chini. Let these veggies marinate and when wanti- ng to serve, dish in the amount you need without the marinade into a bowl and add some fresh fruit like strawberries, plums, mango and pineapple. The sweetness of the fruit is fun tasting with the tartness of the vinegar. Enjoy the recipes over the summer and look for my next feature: BACK TO SCHOOL IDEAS coming in September. gies! Mock Champagne 4 cups chilled apple juice 2 cups chilled gingerale 1-2 lemons sliced 1 lime sliced (optional) When we camped we never had ice but you could serve this over ice. Mix the drink and let it sit for a bit with the lemons and lime. Cool and refreshing! The big Cookie Bake 1 cup butter 1 cup each brown and white sugar 2 eggs 1 tsp vanilla 2 cup flour 2 1/2 cup blended oatmeal (Measure oatmeal and blend in a blender to a fine powder) 1/2 tsp salt 1 tsp baking powder 1 tsp baking soda 1-2 cups chocolate chips 1 small Hershey chocolate bar grated 1 1/2 cup chopped nuts The original recipe is double the size. Cream butter and both sugars. Add eggs and vanilla. Add remaining ingredients and mix together. Roll into balls and place two inches apart on a cookie sheet. Bake for about 10 min. at 350. For some fun at the picnic add M and M's to the cookies and omit the nuts. Kids will snap them up in a hurry. UCW plan special dinner and theatre event By Rhoda Rohde THAMES ROAD CORRESPONDENT THAMES ROAD — The Worship Committee was in charge of the church service on Sunday morn- ing. The Introit was sung and Elson Lynn lit the Christ candle. Judith Parker gave the welcome and everyone shook hands. Parker gave the announcements and led in the Call to Worship and the Gathering Prayer respon- sively. Everyone sang "God We Praise You For the Morning". The Prayer of Confession was led by Parker responsively and the Affirmation of Our Faith "A New Creed" was read in unison. The hymn "Jesus Love Me" was sung. The choir sang "There is a Rainbow Shining Somewhere" accompanied by Marilyn Vandenbussche at the piano. Psalm 45 was read responsively with Karen Etherington as the leader. Etherington read the Scripture, Genesis 24: 34-38, 42-49, 58-67 in story form which was really interesting. Sharon Passmore gave the message "In Partnership and Roses" which was well done. The hymn "Jesus Shall Reign" was sung. Joan Morgan gave the Minute for Mission "Worship At Home." Ola Batten and Helen Kadey received the offer- ing and also were the greeters. Morgan brought an item forward for the food bank. Etherington gave the offertory prayer as well as the prayers of the people. The closing hymn was "We Are Marching." Passmore gave the Commissioning and Benediction. Everyone sang the closing chorus. Announcements Thank you to Fred and Bev Delbridge and Helen Weston for volunteering for the "Out of the Cold" program in June. Sept. 10 - The Finance Committee is planning the second annual golf and barbecue fundraiser at the Exeter Golf Course; $40 includes green fees and all -you -can -eat barbecue. Barbecue only $15. Personals Last Tuesday night, Ross and Kay Hodgert and Alana Hodgert attended the graduation of Christine Ellis at the Centre in the Square in Kitchener. Congratulations Christine. Kim Riehl returned to her home in Miami, Florida after visiting with her parents Gerry and Elda Riehl and other relatives in the community. Congratulations to Derek Etherington who grad- uated with honours June 18 from the University of Waterloo with a Bachelor of Applied Science in geological engineering. He is currently employed in his field in Calgary, Alberta. Get well wishes are extended to Jack Duncan who fell recently and broke his leg. He was a patient in a London hospital and is now in South Huron Hospital, Exeter. Fred and Bev Delbridge attended the funeral of THAM Bev's aunt, the late Hazel Hamilton at the C. Haskett & Son Funeral Home recently. Rev. Jock Tolmay was the minister. Sympathy is extended to the relatives and family. Bill and Rhoda Rohde attended the fourth birth- day party for Kaylee Geiger at her parents' home, Ben and Karen Geiger, Zurich on Friday evening. Her birthday is the first of July. Happy birthday Kaylee. A number of people from this area attended the Decoration Service at Kirkton Union Cemetery on Sunday evening. Alan and Rhonda Jeffery of Victoria Harbour visited with Glenn and Dorothy Jeffery, Jeff and Connie Millar and Bill and Rhoda Rohde on Sunday. On Wed., June 29, sister Jean Hodgert was a guest at a tea, held in the Exeter United Church and hosted by the Pride of Huron Rebekah Lodge, Exeter, in honour of her appointment to the office of Chaplain of the Rebekah Assembly of Ontario. Guests were greeted by several sisters, and after signing the register, were escorted to the tea room, tastefully decorated with royal blue, white and silver. Tea was poured by four sisters, Ruby Beaver, Audrey MacGregor, Kay Wise and Doris Denham. Sister Jean was elegant in her officer's dress, a floor -length gown of royal blue sheer crepe, deco- rated with much beading and sequins, with silver shoes, purse and jewellery. Many friends, relatives, Exeter sisters, as well as sisters from neighbouring lodges, attended the tea to congratulate Jean on her appointment and to wish her well in the coming year. ES ROAD NEWS
