Boston Bean
Salad
3/4 cup tomato juice
1/2 cup ketchup
1 tsp. mustard
dash salt
14 oz. can pork and beans
1/4 cup drained sweet relish
3 oz. lemon jello
1/2 cup diced celery
Heat tomato juice, stir in jello until dis-
solved. Add ketchup, juice of lemon,
mustard and salt. Chill until slightly
thickened. Fold in beans, celery and rel-
ish. Chill until firm.

2 tbsp. corn syrup
2 tbsp. brown sugar
1 can tomato soup
Wash and soak beans overnight. Next
day drain. Add boiling water and sim-
mer covered until tender, 1 1/2 - 2 hours
- do not drain. Add chopped onion,
bacon, syrup, sugar, tomato soup and
salt to taste. Place in baking dish and
bake covered about 3 hours at 275°.
Uncover and bake 1 to 2 hours longer. I
often double the recipe and freeze por-
tions.
