Roots of potato history
discussed at WI meeting
ELIMVILLE - The
Elimville Women's
Institute met at Grace
Pym's home the after-
noon of March 17. Seven
members donned green
wearing apparel in
observance of St.
Patrick's Day.
President Shirley
Cooper opened the
meeting with a reading,
'My Most Embarrassing
Moment.' The roll call
was answered by telling
your favourite way of
serving potatoes. In the
business the following
events were mentioned:
a ROSE Program train-
ing workshop in Ilderton
Hall April 29; the Huron
South District annual
meeting in Zurich May
20; the Huron South
District Picnic July 6 in
Crediton. A letter was
read for information
regarding changes to
the Huron County
Bursary Fund. This will
be voted on at the
County Rally in
September. A donation
of funds was voted to
the Exeter Agricultural
Society regarding prize
money for the 150th Fall
Fair.
Convenor Grace Pym
combined two themes
for the program, `Tasty
Tators and Such' and
'St. Patrick's Day.' A
reading 'A Little Green
Goes a Long Way'
informed all about St.
Patrick the patron saint
of Ireland, a man who
was in fact Scottish. He
lived to be 71 years old
and died in 461. Irish
songs were named and a

Muriel Parsons gave a
reading, 'Meet the
Tators.'
Pym reminded the
group that March was
recognized as National
Nutrition month by the
Dieticians of Canada and
the Dairy Farmers of
Canada. She displayed
seven varieties of pota-
toes and involved the
members in identifying
them. Sweet potatoes do
not belong to the potato
family. It is vine -like
plant belonging to the
same family as the
Morning Glory. The type
of sweet potatoes nor-
mally grown for human
consumption are often
wrongly referred to as
yams. The true yam is
from a different family
of plants and not com-
mercially grown in
North America. Sweet
potato roots are rich in
Vitamins A and C and
potassium.
Potatoes are native to
South America and were
slow to be adopted by
early settlers to North

America. The potato
helped save Ireland
from famine in 1740,
and Prussia in 1774.
Late blight destroyed
the fresh potato crop in
the 1840's and resulted
in massive starvation
and immigration to
North America. Potatoes
are the greatest comfort
food of all time and
known to be the most
valuable vegetable crop
in Canada. It is a
healthy vegetable rich in
Vitamin C, dietary fibre
and folacin, an excellent
source of potassium and
has no fat. Info sheets
with facts relating to
potato varieties, buying,
storing, preparation and
several recipes provided
by the Ministry of
Agriculture and Food
were handed out to the
members.
In keeping with the
colour for the day, the
hostess served a green
and white dessert.
Annual membership fees
will be paid and volun-
teer hours reported at
the next meeting April
19 at Shirley Cooper's
home.
