It was staff appreciation week last week at Hensall's Queensway Nursing and
Retirement Home. Director of programs Carol Gascho described the week as "a
great week of learning, pampering and appreciation." Services provided for staff
included facials and foot treatments, massages, service awards, lunches, and prod-
uct displays. Staff also completed health and safety quizzes during the week and
door prizes were awarded.Above, Queensway nurse's aid Trudee Balsdon receives

cooking with memories
BY DEBBY WAGLER
IN MY MOTHER'S KITCHEN, AS IN MY OWN, THERE ARE
MANY TRIED AND TRUE RECIPE BOOKS. THERE IS A SMALL,
OLD, FALLING APART ONE ON MY MOTHER'S SHELF THAT
HOUSES THE BEST REAL ITALIAN SPAGHETTI RECIPE YET!
AS A YOUNG GIRL I ALWAYS COOKED MONDAY NIGHTS
AND THIS RECIPE WAS ONE OF THREE MADE FAITHFULLY.
THE RECIPE BOOK IS SPLATTERED AND WORN, MY OWN
HAND WRITTEN RECIPE IS COPIED TWICE BECAUSE OF USE
AND SPLATTERS! I'VE ADJUSTED THE RECIPE TO SUIT MY
COOKING STYLE AND HAVE SERVED THIS RECIPE UP MANY
TIMES OVER. ENJOY.
REAL ITALIAN SPAGHETTI
1 pound lean hamburger
2 large onions chopped fine
2 minced garlic cloves FOR
1 cup celery chopped THE
1/2 tsp pepper
1 tsp salt
In a dutch oven or extra large skillet saute the hamburger.
When no longer pink add the other ingredients, onions
through to celery, and cook till lightly browned. Add salt
and pepper.
10 oz tomato soup
18 oz tomato paste
28 oz canned tomatoes
handful parmesan cheese
1/2 cup sugar
shake chili peppers
3 Tbsp parsley
1/2 tsp each of oregano, poultry dressing, sage, nutmeg
and thyme
To the sauteed meat add the above ingredients and
simmer for 3 hours, stirring occasionally. Serve over whole
wheat or regular spagettini noodles with fresh parmesan
cheese and french bread! Wow! (The sauce can simmer
for less time as it does many times in our busy household
and it still goes down well! If you put the sauce in a slow
cooker remember to adjust the spices slightly because a
slow cooker can make spices stronger tasting!)
