cooking with memories
BY DEBBY WAGLER
WHILE MY CHILDREN WERE YOUNG I MADE THE
FOLLOWING BISCUITS MANY TIMES. ONE SUCH TIME WE
HAD A NEPHEW STAYING WITH US AND I ASSURED HIM
THAT HE COULD HELP HIMSELF TO MY FREEZER AND ITS
GOODIES ANY TIME HE WAS HUNGRY! IN THE FREEZER
HAD SEVERAL BATCHES OF THE FOLLOWING BISCUITS
FROZEN AND AFTER A DAY OF VISITING WITH US
DISCOVERED MY NEPHEW HAD TAKEN ME AT MY WORD
AND CLEANED THE FREEZER OUT OF AT LEAST 18 CHEESY
BISCUITS. I NEVER SAW HIM EAT ONE! THE RECIPE CAME
FROM A FRIEND WHO MADE THESE FOR ME WHEN I CAME
HOME WITH A NEW BABY. WHAT A TREAT!
Cheesy Biscuits
2 cups all purpose flour
I /2 tsp baking soda
4 tsp baking powder
1 tsp salt
3 Tbsp white sugar
I /4 cup shortening
1 cup buttermilk
1 cup grated old cheddar cheese
Preheat oven to 350 degrees. In a mixing bowl place the
ingredients flour through white sugar and toss with a fork.
Cut in with a pastry cutter the shortening and then the
cheese. Mix in the buttermilk with the fork and then put
dough on a floured surface. Knead it 8 to 10 times. Pat
out to about a 1/2 inch thickness. Cut with a glass and
put on a cooking sheet. Bake in oven for 10-15 minutes.
For a change add 1 cup raisins in place of the cheese, a
1/2 tsp of cinnamon and serve up a breakfast biscuit.
Enjoy!
