OESCH, Zurich CHERY PIE (Two -crust or Crisscross) (Mrs. M, Schilbe) 1% tablespoons quick tapioca 2 tablespoons sugar pinch of salt 1 cup fruit syrup 1 teaspoon butter 3i teaspoon almond extract 2 cups drained pitted cherries Pastry for either two crust or crisscross: Combine tapioca, sugar, salt and syrup from fruit in sauce- pan. Cook slowly over direct heat, stirring constantly until thickened. Add butter, almond extract and the cherries. Cool, then pour into pastry lined pie plate. Cover with top crust or with strips of pastry for lattice top. Place on lowest rack in 450 degree oven and bake for ten min- utes, then reduce heat to 350 de- grees and bake another 20 min- utes. QUICK ORANGE BREAD (Mrs. Milfred Schilbe) 2 large oranges' 1 cup cold water 1/2 cup sugar 1/e cup cold water 2 cups sifted all-purpose flour 3 teaspoons baking powder 1 teaspoon salt 1/2 cup sugar 2 eggs, well beaten cup unstrained orange juice 1 teaspoon lemon juice 3 tablespoons melted butter or shortening. She was the daughter of the late Mr, and Mrs. Menno Kipfer, of the Parr Line, and they lived at Wagner's Cor- ner for many years before moving to Kitchener, Surviving are her husband, three sons, two daughters, and six brothers; John, Michigan; Noah and David, Iowa; Ezra, Hensali; Sol and Simon, Minnesota; and three sisters, Mrs. Thomas Kyle, Hensel; Mrs. Leesom Desjardine, Exeter, and Mrs. Jacob Ginge- rich, Zurich, Stirring occasionally until mix- ture is syrupy. Cool, Extract juice for grated oranges and measure 1/2 cup untrained for use in dough mixture. Measure sifted flour into sifter, add baking powder and salt and sift into mixing bowl. Add sugar and mix well. Adcl orange and lemon juice to beaten eggs, mix well, then add melted butter and orange syrup. Beat well. Combine liquids with dry ingredients, stir- ring just enough to blend. Pour into a well -greased loaf pan (about 8"x5"x3") and let stand 20 minutes. Bake in 350 de- gree oven from 55 to 60 minutes in centre of middle rack.
