While some members of my
family and I were visiting rela-
tives in Indiana during the past
week, we enjoyed some egg -nog
pie, which was new to us, and I
felt you ladies might also like to
try it. The recipe follows:
EGG NOG PIE
(Mrs. Edgar Buhman)
Make a graham cracker crust by
mixing:
11/4, cup graham cracker crumbs
1/8 cup melted butter or marg.
Chill the crust while mixing the
filling. e unflav-
oured gelatin in n 1e cup cold water.
Mix the following:
2 well beaten eggs
1/2 cup white sugar
1/$ teaspoon salt
1/2 cup Pet milk (or Carnation)
1/2 cup water.

Place in top of double boiler, cook
and stir until mixture thickens
slightly; add gelatin and stir until
dissolved. Remove from heat and
add 2 teaspoons vanilla. Chill un-
til slightly thicker than unbeaten
egg whites (syrupy, but not yet
started to jell.). Then whip 1/ cup
ice cold Pet or Carnation milk and
fold into chilled gelatin mixture.
Pour into crust and sprinkle with
nutmeg, chill until firm.

shaft, delivered to the Zurich Water System.

PICKLED CORN and GHERKINS
(Mrs. J. VanEgmond)
Cook a quantity of field corn with
a wee white tassle peeking out,
until tender (about ten minutes).
Wash a quantity of gherkins and
put them in jars, alternating with
the cooked corn, add a piece of dill
to each jar. Heat 2/3 cup of vine-
gar and 1/3 cup of water, 8 tea-
spoons sugar and 1 teaspoon salt
for each quart jar. Steam in can-
ner for 1 minute after the water
comes to a boil.

canning and pickling, so why not
send us in your favourite recipes.

in learning new ways of doing
pickles and other dishes which
are now in season.
*WAFER PICKLES
(Mrs. Ed. Haberer)
Cut cucumbers into slices about
% inch thick and salt overnight.
Mix the following ingredients
and bring to a full rolling boil:
1 cup white sugar
6 sucaryl or saccharin tablets
(1/2 grain)
1/ teaspoon Keen's mustard
1/ teaspoon tumeric
1/2 teaspoon whole allspice
1/2 teaspoon celery seed
1/2 teaspoon mustard seed
1/2 teaspoon cassia buds
1/2 teaspoon pickling spice
To this add 1 cup water and 12/4
cups vinegar. This will fill about
2 quart jars. After the mixture
has boiled up well add the sliced
cucumbers and heat until they
change color.
Must have knowledge of feed mixing and general feed mill operation.
