This is the reciPineapple Chiffon Pie fortwh ce h was
'served recently at a banquet in
the Community Centre here,
LEMON -CHIFFON PIE
2% cups rolled Graham Wafer
crumbs
34. cup brawn sugar
U. teaspoon cinnamon
2,6 cup butter and margarine
or only margarine
Mix as for pie dough, then pat
into 2 pie plates and bake for a-
bout 10 minutes in oven not higher
than 350°. Cool crusts.
For the filling I get 1 box of
"Jello Chiffon Pie Filling" lemon
flavor and make it according to
directions; it takes 1 box for each
crust. I use the directions on side
of box "Pineapple Party Pie" for
special occasions, and then I top
it with whipped cream.

Following is a light cream -style
dessert, which is easy to make
and full of vitamins for both young
and old:
PRUNE ORANGE FLUFF
cup cooked prunes
2 teaspoons gelatin
% cup cold water
Y2 cup orange juice
14 teaspoon grated orange rind
1 teaspoon lemon juice
2 egg whites i!

1 cup granulated sugar

small pieces. Soften gelan n 4.
cup cold water, while you heat re-
maining �/�, cup water with the
orange juice and dissolve gelatin
in it. Stir in orange rind and
lemon juice. Cool until it begins
to thicken. Beat egg whites with
salt until stiff and gradually beat
in sugar. Fold in the gelatin mix-
ture, prunes and marshmallows.
Chill until firm.
HOUSEHOLD TIP
Use a pair of scissors (the cut-
ting ped ana old water frequently) art of which should be dip-
ped
cutting marshmallows into very
small pieces; it is much easier
than using a knife.

APPLE -CRISP
Into a deep greased baking dish
put:
1 quart sliced apples
Sprinkle over top:
'/2 cup white sugar
14 cup water
'Aa. teaspoon cinnamon
Mix:
2/2 cup brown sugar
3 tablespoons butter
1 cup flour
Mix until crumbly and spread over
apples. Bake until brown. Serve
with whipped cream or table

DO WE NEED
ANOTHER HIGH SCHOOL?

Dear Sir:
Recently there has been some
discussion about forming another
high school area in the vicinity
of Zurich, which would include
parts of Hay, Stanley and Stephen
township. Your editor asked for
an opinion from a Stanley town-
ship resident,
As I live hi the south west area
of Stanley, I think it would be an
excellent idea, but it will take a
considerable amount of effort on
the part of those people interest-
ed. From our point of view there
are quite a number of reasons
why we should have another high
school.
The Clinton school is over -crow-
ded, and building another addition
to it is not the best way to remedy
the situation. The basic unit at
Clinton was built for 200-300 stu-
dents. About four years ago there
was an addition built and plans
are under way for another add -
tion, but no matter how many
ooms are built the original school
s not designed for additions,
and with 500 or more pupils every-
hing is over crowded. Even with
he new addition a commercial
ourse could not be taken till the
ourth year because of lack of
oom and facilities. This is what
appens when a school is over
rowded.
We will take History for an ex-
ple, the teacher has 38 pupils
ome in to history class, when
ey are through another 38 or 40
ome in and when they in turn go

e teacher is supposed to have the
me enthusiasm for the last class

c.
Then there is the distance from
hool to contend with. We have

school. For some students this

education they will have to give us
their utmost consideration.
Much more could be said on this
subject, but I do not wish to im-
pose further on the generosity of
the Editor.

Dear Sirs:
In regards to dancing in the
Community Centre in Zurich, you
hear a lot of talk, "Why aren't
the dances in our town a success ?"
I am just a local farmer living
not far from Zurich. I have been
attending all the dances quite reg-
ularly, in fact I have missed only
two of them. And what stands
out most is that you don't see any
of the sponsors there themselves.
For example, some friends and
myself quite recently went danc-
ing in a neighboring village, and
there, lo and behold, who did we
see but a few of the good spon-
sors of the Lions Club dances,
Now if that doesn't stand out
in the public among your own peon
pie what does ? On Friday, Jana
uary 30 I looked in the door at
the Community Centre, and saw
only a few people there, but none
of the sponsors. Oh pardon me,
there were two of them there grab,. bing the money.
If that is patronizing your own
town, I don't see it. Please don't
leave it to a few farmers to sup-
port your dances. If you people
can't come, don't look for us to
come.
We have had nothing but the
best of music, so what is the
trouble? Come on citizens, show
us where we stand, and don't let
a few outsiders think they have to
keep your dances going. Show
them your stuff, let's see some
crowds, eh!
