May we have your favourite Christmas cake recipe and some of your other choice Christmas baking? I hope you do not mind sending us your "specials", I always feel flattered if someone asks me for one of my own recipes. CHICKEN 'A LA KING (Mrs. C. F, Bowden) 4 tablespoons butter 1 cup sliced mushrooms 4 tablespoons chopped green pepper 4 tablespoons flour 1 cup chicken stock 1 cup enriched milk % teaspoon salt dash of pepper and nutmeg 2 cups diced chicken 2 tablespoons pimento Melt butter, add mushrooms and green pepper, cook for three minu- tes. Blend in flour, chicken stock, milk and seasoning in given order. Cook 2-3 minutes. This sauce can be made ahead of time. When ready to serve reheat over hot water, add diced chicken and pim- ento. Serve in patty shells or over cooked rice. CEREAL COOKIES (Mrs. J. Gingerich) 1 cup sifted flour 1 teaspoon salt ?Vs cup shortening 1 egg (beaten) 1/2 teaspoon vanilla 14 teaspoon baking powder teaspoon soda cup white sugar 1/2 cup brown sugar 1 cup rice crispier 1 cup fine oatmeal 1/2 cup slightly crushed corn flakes Form in balls, put ori greas- ed cookie sheet and press with fork. Gingerich) 1 cup butter 1/ cup icing sugar 4 cup corn starch 11/2 cups flour (all purpose) Mix icing sugar, corn starch and flour well. Work in butter, roll out about 1M:" thick and bake at 350° Decorate shortbread with piece of cherry or piece of candied fruit before baking (optional). Shortbread may be baked some weeks before Christmas and put in the deep -freezer. Just to prove that it can. happen though, Mr. William O'Brien dropped into our of- fice on Thursday to tell us they had been eating ripe ber- ries for the last few days. He informed us they were nice and red, very tasty. Accord- ing to Mr. O'Brien there had been quite a few berries on the stalks the past few weeks. However they will be well frozen by now. A sample of the berries would have been better, Mr. O'Brien, we sure do like them.
