Don't spoil your ven- ison when you get it home, Ontar io Department of Lands and For- ests experts advise. They point out that deer meat can be cook- ed by the same methods used for beef of a similar grade. "Some prefer to remove the fat from venison before cooking," they say. "Suet, pork fat or bacon may be mixed with ground venis- on or strips of bacon or salt pork may be placed over the outside of roasts to keep meat from becom ing too dry. "Tender cuts of meat are cook- ed by dry heat and the less ten der portions by moist heat. While young bucks and does furnish the more tender meat, the meat from an aged animal can be made appe• tizing and tender if cooked correct- ly. "Tomatoes, onions, spices and herbs often are added if the ven- ison flavour is objectionable to anyone. A tablespoon of vinegar may help destroy the "wild" fla- vour. "Tender cuts, such as rib and loin chops, round steak and leg roasts, can be pan or oven -broil- ed or roasted. Bake the venison.,,ixt. the oven for 40 minutes; "using moderate heat—about 350 degrees --theft cool and chop. 'MIT" with chopped suet, pared, cored and chopped ap ples, currants, raisins; citton. Add' sugar, spices, juice of two oranges, finely chopped rind of one,etange and the cider or grape juice, Sirh= mer for 30 minutes. Pack hot into jars, seal and pro- cess -60 minutes for a pint jar, and 70 minutes for a quart at 15 pounds pr eSsure, or three hours in a boiling `water bath. The quan- tity shown makes enough for ten to 12 nine -inch pies. For roast venison --the loin or round—the experts suggest that it be sprinkled with salt and pep- per over all sides of the meat. Place on a rack in an uncovered shallow pan and put in a pre=heat- ed, slow oven at 300 to 325 de- grees, Do not add'"water and do not cover. Their combined efforts plowed 27 acres in the one day. This act of goodwill completely compensa- ted Mr. Zondag for the many hours of time he lost because of his . injury. Earlier in the season the friends and. ,neighbours had taken in his potatoes and other crops. Mr. and Mrs. Zondag acme to Canada from Holland about nine years ago, and just last spring they received their .citizenship papers. Good neigh- bours and friends such as the ones of the Zondag's make them very happy that they chose Canada to settle.' in.
