(Staff Photo) Natural !I each of Potato Tops Makes est Potato Chips; Keeps Color Longer While it is often desirable to tial chirp plant and made satis- kill potato tops with a chemical factory chips. However, after star - top killer to facilitate harvesting, this practice may have an unde- sirable effect on the chipping quality of the tubers. D. C. MacKay and G. W. Hope of the Kentville Experimental Farm, noted an apparent change in starch -sugar metabolism of the stored tubers and a darkening in colour of resulting chips. A test was carried out on Net- ted Gem tubers from two Similar fields, one of which was killed with sodium arsenite while green while the other was allowed to die naturally. Tubers harvested from both fields were accepted by a comarner- 111 age at 43-45 degrees F. for five months and reconditioning at 70- 75 degrees F. for two weeks, tub- ers from the killed field made dark unacceptable chips, while those from the untreated field remained of excellent color -and • quality. It seems. that though tubers from the killed field contained little reducing sugar at harvest, after storage and conditioning, theyshowed a high concentration of sugar, which. is known to be associated with +browning. Tubers from the field with died naturally had slightly more reducing sugar at harvest but considerably less after storage and conditioning. You have read about them!
