Ritaen Tips To Aid New Bride
Cooking sucess and "know how"
comes with experience, but here
are a few kitten nips and tricks
that will hurry along the bride's
skill as a cookery expert.
Flour comes ;three ways: All-
purpose, cake .and self -rising. All-
pvdpws'e is ,always used for yeast
breads, most quick breads, most
pastries. many cakes and cookies.
Cake flour is often used for cakes,
sometimes for cookies' and quick
breads. Self -rising flour is often
• used in cakes, cookies and hot
bread. Modern recipes state the
.tripe of flour recomniendied !for
the particular recipe.
Drop biscuits are easier to
make than regular ruffled biscuits
so use this never fail formula: In-
crease the milk in a regular bak-
ing powder biscuit recipe to one
cup, then spoon mixture into small
well -greased muffin pans or onto
a baking sheet. Bake aecorddinig
to :the directions :for regular bis-
cuits.
When rolling out cookie dough,
roll out one-quarter to one-half
of the dough at a time, but don't
add the scraps of dough to the
new portion you roll out. Put all
the scraps together and roll out
at one time.
In making quiieck breads such
as loaves or muffins, it is import-
ant not to overheat. Dry ingred-
ients
ngrediien:ts should be stirred with wet
liquids' only until moistened.
Lumps can be disregarded; if
quick breads are beaten they de-
velop tunnels and peaks.
When baking two layers of
cake, niaeke certain that pans do
not •toudh each other in the oven.

basements.).

No. 8 School—Outside.
No. 7 School -2 rooms inside, walls
only.
No. 7 School -1 room inside, walls and
ceiling.
All painting to be two coats; ceiling flat white and sides
light green or light cream.

• No. 4—New roof on north side of school
and on east side of wood shed.
All these tenders to be started and completed in the early
part of the summer holidays. For more complete details please
contact the secretary. Separate tenders are asked for each in-
dividual part. Tenders to be in the hands of the secretary by
June 10, at 6.00 p.m. Lowest or any tender not necessarily
accepted.

To coat chicken or meat put
the required amount of flour, salt
and pepper to a paper bag; drop
in the chicken pieces or meat cu-
bes, Twist the top of the bag
tightly and shake.
Use of a meat thermometer is
the only accurate way to tell if
a roast has achieved the d'e'gree
of ,doneness you are aiming for.
Pastry is best made by using
a pastry lard or shorter'u'.ing, Sev-
eral tablespoons of butter cut
coarsely into the flour -lard mix-
ture when blended will aid in
achieving a golden brown color
when baked.
If sour milk or cream is called
for in a recipe, you can sour sweet
milk yourself by first putting a
tablespoon of vinegar or lemon
juice In the cup then fil9'ing to
one -cup s ark with milk. Allow
to stand for a minute.
