It smells so good while. being mix-
ed and especially in the oven. It

Sea Foam Spice Cake

tening, 1 cup sugar. 2 eggs. unbeaten,
1/3 cup molasses.
Sift flour once, measure, add bak-
ing powder, salt and spices, and sift
together three times. Cream butter
thoroughly, add sugar gradually, and
cream together until light and fluffy.
Add eggs, one at a time, beating
thoroughly after each. Then add mo-
lasses, and blend. Add flour, alter-
nately wi'h milk, a small amount at
a time, beating after each addition
until smooth. Bake in two greased
0 -inch layer pans in moderate oven
(375'F.), 25 to 30 minutes, or until
done. Spread coconut sea foam frost-
ing on cake.
Coconut Sea Foam Frosting
2 egg whites, unbeaten, 1% cups
firmly packed brown sugar, dash of
salt, 5 tablespoons water, 1 teaspoon
vanilla, 1 can coconut southern style.

Combine egg whites, sugar, . salt
and water in top of double boiler,
beating with rotary egg beater until
thoroughly mixed, Place over rapid-
ly boiling water, beat constantly with
rotary egg beater and cook 7 min-
utes, or until frosting -will stand in
peaks. Remove from boiling water;
add vanilla, and heat until thick
enough to spread. Spread between
layers and on top and rides of cake,
sprinkling with coconut, while frost-
ing is still soft. Makes enough fros-
ting to cover tops and sides of two
9 -inch layers, or top and sides of 8
x 8 x 2 -inch cake (generously), or
about 2 dozen cup cakes.
Fish Souffle
One cup lnilk, one tablespoon but-
ter, one tablespoon flour, one-half
teaspoon salt and pepper. Make a
white sauce. Then add one-fourth
teacup of stale bread -crumbs, one
cup of flaked fish, and beaten yolks
of two eggs. Cook two minutes, then
fold in the stiffly beaten whites and
