MORE MA,I'LE SYRUP Ontario farmers having facilities for the production of maple syrup are being asked by the Ontario Dep- artment of Agriculture to tap every available tree this year. While wea- ther conditions have much to civ with the annual output of maple ,,y- ,rup, agricultural authorities are re= questing the largest possible gallon- age of maple syrup in 1942, pointing out that a large output will have the .effect of further reducing sugar con- sumption. Thus the Ontario maple tree takes its place in agricultural war production with bacon, cheese, eggs and other dairy products. •Many firms in search for sugar substitutes have turned to maple syrup, and al- ready U. S. buyers for lnaple syrup have appeared in Ontari.o. The pre- vailing wholesale price for syrup at Toronto last year was $2.40, per gal- lon (weight 13 lbs. 2 ounces). Far- ed their maple syrup equipment are avers who have not already overhaul - advised to do so at oncec, S.
