Oven canning unsafe Food specialists at the Ont- ario Food Council, Ministry of Agriculture and Food. strongly advise against using the oven for hone cnning. Since temperatures fluctu- ate widely on oven thermost- ats, the product you are proc- essing may not reach a temp- erature high enough to ensure proper sterilization. Fruits may be processed sufficiently, but it is difficult to determine an accurate processing time because of the temperature fluctuations. Oven -canning of veget- ables should never be at- tempted. Since a heat great- er than boiling is required to destroy dangerous bacteria which may be present in veg- etables, the only safe way to home can vegetables is iri a presure canner; 00 matter at what temperature an oven thermostat is set, the internal temperature of the jar of 'vegetables will never get above boiling. Another consideration is the danger that jars may explode while in the oven. The direct. Heat from the elements may be too great for the jars to withstand, leaving you with 0 very messy oven, possible damage to your stove, and a loi al' wasted food.
