Processing jam
in hot water bath
If you are having a problem
keeping mold from growing
on the surface of your jam --
even with a paraffin wax
coating, you might try
"processing" your next batch.
Food specialists at the Ont-
ario Food Council, Ministry
of Agriculture and Food say
that some jams can be proc-
essed in a hot water bath
processor to ensure a well
sealed and sterilized batch.
Jams made without added
pectin can be put into regular
mason jars or special jam
jars with lids that will
pull a seal. Apply the lid
tightly and process for 5 to
10 minutes in enough hot
water to cover the jars compl-
ely. Count processing time
after water begins to boil
rapidly.
Do not use wax when proc-
essing jam in this way. The
hot water bath processing
gives. a better seal, removes
air from the jar and dest-
roys any mold that may be
present on the top surface
of the product. Remember,
do not heat -process any prod-
uct made with added pectin.
The additional heating will
destroy the gel -forming abil-
ity of the pectin and result
in a thin product.
