That's why food specialists at the Ontario Food Council, Ministry of Agriculture and Food have developed these scrumptious summer supper salads. RUSSIAN SALAD 6 medium-sized potatoes, cooked in their jackets, peeled, diced and chilled (41/2 cups) 1 medium-sized apple, diced unpeeled and sprinkled with 1 tsp. lemon juice. 1 cup finely chopped onion 1 cup diced, cooked cold beets (use fresh or canned) 2 tbsps. chopped chives 2 tbsps. capers 2 tbsps. chopped gherkin 2 tbsps. chopped parsley 1/2 tsp. salt 1/2 cup mayonnaise Greens 2 hard -cooked eggs, sliced Toss all ingredients except the greens and sliced eggs in a bowl. Arrange in a large bowl lined with greens and garnish with sliced hard -cooked eggs. Makes 6 servings (1 cup each). ONTARIO ANTIPASTO SALAD 5 large fresh mushrooms, rinsed and sliced 1/3 head Romaine lettuce, torn 1/3 head Escarole, torn 1/3 head Endive, torn 1/2 cup celery, diagonally sliced 1/8 to %4" thick 1/2 cucumber, scored and sliced paper thin 3 green onions, chopped 1/2 cup sweet pickled onions, drained 4 ounces Ontario Mozarella cheese, in julienne strips 1/3 pound thinly sliced pepperoni 1/2 cup garlic croutons 2 medium tomatoes, cut in eighths about 1/3 cup grated Parmesan cheese DRESSING 1/3 cup red wine vinegar 2/3 cup salad oil 1 tbsp. fresh lemon juice '/2 tsp. dry mustard 1 tsp. salt 1 tbsp. fresh parsley, minced Freshly ground pepper to taste 2 cloves garlic, crushed 2 tsps. dried basil leaves 1 tsp. dried oregano Combine ingredients for dressing and add fresh mush- room slices. Marinate 4 hours at room temperature or over- night in refrigerator. Toss greens and rest of ingr clients except Parmesan cheese. Pour dressing over all, toss. Sprinkle each serving .with grated Parmesan cheese. Serve immediately. Makes 8 to 10 servings as an appetizer salad or 4 to 5 servings as a main course salad. New legislation New legislation defining mopeds and their operation goes into effect immed- iately, Minister of Transport- ation and Communications John R. Rhodes announced Monday. The new legislation now makes it illegal for anyone under 16 years of age to oper- ate a moped in Ontario road- ways. It also makes it illegal for anyone to carry a passenger on a moped.
