The Ontario Ministry of Agriculture and Food licenses 265 meat packing plants in the province. The Ontario - approved plants provide custom -kill services, cutting, wrapping and fast- freezing for the home freezer, and retail outlets. Most of the plants are small compared to the large well- known packers, but they processed more than 450,000 red meat car- casses and over 200,000 rabbits in 1974. Inspection and approval of the meat starts while the animal is still alive, continues through the packing pro- cess and concludes only when the meat leaves the packing house. Tighter markets, the scattered, relatively small num- ber of producers. and problems facing these producers are some of the reasons for the small sheep popu- lation. Ontario's production of lamb and mutton is as yet below the demand per capita in Canada. Consumption of both lamb and mutton decreased slightly in 1973 to 3.7 pounds, despite a strong demand for fresh lamb in the large population centers. An Ontario Ministry of Agriculture and Food sheep specialist indicates that sheep make better use of rough- age than other classes of livestock. They will do well on rough and rocky acreages where cattle would starve. Research into breeding, nutrition, housing, confinement rearing and sheep breeds may help bring about a resurgence in the growth of Ontario's sheep population in the not -too -distant future.
