Food specialists have always
said that you can only keep
"all fresh" ground beef for a
day or two in your refrigerator.
You must then assume that
ground beef made from "fresh
and frozen portions" cannot be
kept for quite as long; it must
be frozen immediately, or
eaten the day it is purchased.
Obituary
PAUL CLEAVE
One of Bayfield's oldest resi-
dents, Paul Cleave, passed
away on Friday, April 25, in his
95th year. He farmed on the
Bluewater highway in Stanley

Township for many years before
retiring to Bayfield.
Surviving is his wife, the
former Florellinor E. W , Watson;
three sons, Logan, Bayfield;
James, R.R.3, Bayfield; and Eric,
Wingham; one daughter, Anne,
Mrs. Edward Twentyrnan, of
Waukegan, Illinois. There are
also 17 grandchildren and 14
great grandchildren.
The body rested at the West-
lake Funeral Horne, Zurich,
where the service was held on
Sunday, April 27, at 2 p.m,
with Rev. Ivor Bodenham offic-
iating. Interment was in the
Bayfield Cemetery.
Pallbearers were Merrill
Switzer, Bill Leeming, Alf
Scotchrner, Gordon Westlake,
John Campbell and Bob Turner.

THE DARK
Because edible mushrooms can be
found in pastures, woods and often
in lawns, many people assume com-
mercial production to be a simple
process. Nothing could be further
from the truth.
To produce a commercial mush-
room crop is an exacting science
requiring rigid environmental con-
trols on temperature, humidity and
ventilation. Because mushrooms are
fungi, they depend almost entirely
on organic matter for nutrition. The
nitrogen content of the compost is
the most important factor affecting
crop yields, with the optimum range
for nitrogen being between 1.60 and
2.00 percent.
The Ontario Ministry of Agriculture
and Food provides growers with a
complete mushroom compost nitro -

igen analysis (upper), throtigh the
Feed Analysis Laboratory at the
!University of Guelph. Using the en-
velopes available at Ministry offices,
growers can send samples to the
laboratory, along with a minimal
fee per sample.
Results are reported directly to the
grower by a collect telephone call.
followed by the return of a com-
pleted analysis form by mail.
Such analysis is needed to produce
a marketable crop. similar to the
one pictured (lower). When the
'mushrooms are ready to be har-
vested, the veil under the cap is
exposed but not broken. Following
trimming, the crop is ready to be
shipped to fresh markets or for
processing.
With consumption per capita in-
creasing quickly -- from one pound
per capita in 1970 to three pounds
in 1974 ---- growers have to follow
exacting regimens to keep up with
the demand for this tasty product.
