About people
Mrs. Alice Thiel returned
home after a few weeks holiday
with her daughter, son-in-law
and family, Mr. and Mrs. Don
Kyle, in Amhurst, Nova Scotia.
Why not onions
and raisins?
Most of us look for different
and interesting ways to serve
vegetables at this time of year.
Well, to be different, use onions
as a vegetable instead of as
a flavouring. To be inter-
esting, combine onions and rai-
sins and sherry. The result?
"An unusual vegetable dish,"
say food specialists at the
Ontario Food Council, Ministry
of Agriculture and Food.
SHERRIED ONIONS
AND RAISINS
1/2 cup raisins
1/4 cup Ontario sherry
12 medium (or 16 small) Ontario
cooking onions, peeled
3 tbsp. butter
2 tbsp all-purpose flour
1/4 tsp. salt
1/8 tsp. pepper
1 cup table cream
Soak raisins in sherry. Cook
onions uncovered until tender in
enough boiling salted water to
cover, about 10 to 15 minutes.
Drain, serving 1/2 cup cooking
liquid.
Meanwhile, melt butter in a
large saucepan. Stir in flour
and seasonings. Gradually stir
in cream and 1/2 cup onion
liquid. Continue heating and
stirring until mixture comes to a
boil. Boil one minute, stirring
constantly. Stir in raisin -sherry
mixture and drained onions.
Makes six to eight servings.

Easier -than -pie, these tiny toast cups are crisp shells containing
a creamy, textured mixture of imported Holland Edam cheese,
crabmeat and carrot.
Edam Crab Cups
Aluscious, moist filling of
crab, cheese and carrot fills
these easier -than -pie crisp toast
cups. For shoestring entertain-
ing, tuna can be substituted for
the crabmeat, giving a slightly
different taste and texture to
the mixture. The recipe below
was developed with Edam
cheese from Holland, and al-
though you can use Dutch
Gouda instead, it is always
preferable to use the recom-
mended product for best re-
sults.
1 (6 ounce) can crab meat.
drained
1 cup shredded imported
Holland Edam or Gouda
1 cup shredded carrot
cup mayonnaise
1 tablespoon lemon juice
1/4 teaspoon sugar
! teaspoon curry powder
18 toast cups
1/.,
Flake crabmeat; mix with
shredded cheese, carrot, may-
onnaise, lemon juice, sugar and
curry. Spoon filling into toast
cups. Serve as is or warm in
350°F oven for about 5 min-
utes. Makes 18 snacks.
Substitute 1 (61/2 ounce) can
tuna for crabmeat if you wish.
Filling is excellent for sand-
wiches,
To make toast cups — re-
move crusts from thin sliced
bread. Press bread into well -
buttered muffin tins. Lightly
brush with melted butter. Bake
in 375°F oven for 10 minutes
or until golden.
Tiny toast cups make excel-
lent party hors d'oeuvres.
Enough filling for 18 regular
sized toast cups or about 4
dozen tiny cups.
