Cabbage cutter
It took 15 ladies 40 hours,
now takes one lady four hours
When the bean festival first
started in Zurich 11 years ago one
of the most tedious tasks was the
cutting of the 50 cases of cabbage
for coleslaw. It took 15 women
cutting constantly from Friday
morning to late Saturday after-
noon using knives and chopping
blocks to cut the cabbage requir-
ed.
About four years ago,this
situation took a turn for the bet-
ter. Buying a commercial cabbage
cutter was out of the question.
They were on the market but the
price tag was in the thousands
of dollars—out of the question
for the bean festival committee.
Then Gerry Gingerich decided
there was no reason why they
couldn't make their own cutter.
After all, they had managed to
make nine of the cheapest best
working ovens by converting old
fridges hadn't they? Compared to
that feat, a cabbage cutter did
not seem too far out of line.
So he set to work and out of
a stainless steel -washing machine
tub, a washing machine motor,
an old farm disc and some
Hobart knives he constructed
his own style of cabbage cutter.
The difference it has made in
the time required to cut the
necessary cabbage is tremend-
ous. What used to take 15 women
working round the clock for a day
and a half can now be done by one
person in four hours. That
means the 50 cases of cabbage
are freshly cut on Saturday and
the coleslaw is fresh and moist.
