IT TAKES A LOT OF SCOOPING to get all the beans out of a 500 pound cooker, just ask Orlen Schwart-
zentruber. He ended up with this task Monday night, the first night of bean cooking in preparation for the
festival Saturday. The discouraging thing for Orlen was, when he finished this one there was another
500 pound cooker full of beans ready and waiting. Photo by McKinley
IT TAKES A LOT OF SUGAR to mix even one batch of the beans needed for Saturday's festival. Above,
Dale Schwartzentruber got the job Monday night of measuring brown sugar out of 100 pound bags, by
the cupful. Photo by McKinley
150 volunteers take part
It takes over 150 volunteers
from the Zurich area to allow a
bean festival to run smoothly.
During the week prior to the
festival, there is baking done
every day. This involves approxi-
mately a dozen or so people each
night from about 8 p.m. to 11
p.m.
However, most of the volun-
teers are on duty the day of the
festival. There are three serving
tables with three 3 -hour shifts
at each table. It takes five girls
per shift for a total of 45.
There are two men and four
women on duty per shift in the
kitchen on Saturday, five shifts
of 2 1/2 hours per shift. Here
the work is more strenuous,
thus the shorter length of time on
shifts.
Approximately 15 men are
involved in manning the ticket
selling booths, three of which
are scattered around the mall
arca.
The cabbage and ham has to
be cut the day of the festival
to avoid it drying out, thus there
are more volunteers needed here.
Four girls on each cabbage shift
work three hours and there are
three shifts. Another group
of men take care of cutting the
ham fresh as it is needed.
In addition, there have to be

spare people handy in case of
emergencies. One year one of.
those helping at the tables fell
and broke her ankle. Needless to
say she had to be replaced and if
there are no people handy, this
could be quite a problem.
So, the bean festival is a
community affair, it couldn't
exist otherwise.
