Jellied salads rate special merit as they can be made in advance and require a relatively small amount of time and effort. Food Consultants with the Food Advisory Division of Agriculture Canada offer these tips on preparing successful jellied salads. 13e sure to partially thicken gelatin mixtures before adding fruits, vegetables, meat, whipped cream or beaten egg whites. When making a layered salad, each 'layer must be firm before adding the next. If you will be serving jellied salad at room temperature in hot weather, add more gelatin to make it slightly firmer. A large mold should also be made somewhat firmer to ensure thorough setting. Allow at least 3 hours chilling time for mixtures to become firm. Large molds may need to chill overnight before being turned out. To unmold, dip the mold in warm water (not hot) to the depth of. the gelatin mixture. Loosen around the edge with a sharp knife or a spatula. Put a serving dish on top of the mold, hold tightly and quickly turn it upside down. Shake it slightly to loosen. If the salad doesn't come out of the mold, place a warm cloth over the mold for a few minutes. . Surround a large jellied salad with salad greens once it is on the serving dish. You can turn out individual molds directly onto greens as there isn't as much danger of them breaking. Gar- nish salads with cucumbers, radishes and carrot curls. RAINBOW SALAD 1 6 -ounce package lemon jelly powder 2 cups boiling water 1 cup cold water 12 teaspoon. salt 14 cup vinegar 12. cup finely chopped green pepper 1 cup shredded carrot 1 cup mayonnaise or salad dressing 2 cups shredded cabbage Dissolve jelly powder in boiling water. Fold green pepper into 1/2 -cup portion. Turn into 6 -cup mold and chill until almost set. Fold carrot into 1 -cup portion. Turn onto green pet -::r layer and chill until • almost set. Fold mayonnaise or salad dressing and cabbage into 2 -cup portion. Turn onto carrot layer and chill until firm (about 3 hours) . 8 servings.
