Look for a fruit that's heavy for its size, with flat "eyes" (not sunken, shriveled eyes - 1t won't ripen). Pineapples are harvested and shipped before full ripeness, but are usually ready to eat when you take them home. For more ripeness, however, keep pineapples two to four days at room temperature. To delay further ripening, keep in the refrigerator. Most pineapples are grown in Hawaii, Puerto Rico, Mexico and the Phillipines. Over 80% o1 the processed pineapple comes from Hawaii. The "Smooth Cayenne" comes from Hawaii and is light -yellow to deep golden. The Mexican "Sugarloaf' Is green. The Puerto Rican "Red Spanish" is reddish brown, light or golden yellow.
