for freezing peaches
Fresh Ontario peaches are a
delicious summer treat. The
season never seems long enough.
To prolong the season, food
specialists at the Ontario Food
Council, Ministry of Agriculture
and Food, suggest you freeze
some peaches.
The best choice for freezing is a
freestone variety. The Redhaven
variety will be the first to arrive -
about August 10 this year. Other
varieties recommended for
freezing are Envoy, Madison and
Veteran.
There are 2 methods that can
be used when freezing peaches.
Prepare a cold syrup made by
dissolving 2 cups of sugar in 3
cups cold water. For every 4 cups
of syrup add 1/4 teaspoon of
ascorbic acid to prevent

VERNAM. FINK
On Thursday, July 28, at
Carmel Presbyterian Church in
Hensall, a funeral service was
held for Verna, wife of Edward
W. Fink of Point Clarke. She died
at Kincardine and District
Hospital at the age of 58. She is
survived by two sons, Bryan of
Hensall and William of
Belleville; her mother, Mrs.
Tressa Fletcher of Hensall; a
sister, Mrs. Sadie Hoy of Hensall;
and four grandchildren. Another
son, Dale, died in 1942. Burial
took place in Hensall Union
Cemetery.
THOMAS CAMPBELL
A funeral service was held
from the R.C. Dinney Funeral
Home in Exeter on Wednesday,
July 27, for Thomas F. Campbell,
77, of Usborne Township. Mr.
Campbell died at Huronview in
Clinton. He is survived by his
wife, the former Rita Oke,and a
daughter, Helen, both at home;
and by two sisters in Scotland,
Elizabeth J. Campbell and Mrs.
James (Kate) Dixon. Rev.
Stewart Miners officiated at the
service. Burial was in Exeter
cemetery.

peeled, sliced peaches in freezer
containers.,Cover with syrup and
leave at least 1 inch headspace to
allow for expansion during
freezing. To keep the fruit sub-
merged in the syrup, place, a
small piece of crumpled,
moisture -resistant paper, like
plastic wrap, between the fruit
and the lids. Seal label and4reeze
immediately.
To pack in dry sugar, measure
4 cups of peeled sliced peaches
into a bowl. Stir in 1/4 teaspoon of
ascorbic acid mixed with 1/4 cup
cold water. Add 2p cup of sugar
and stir, Let sugar dissolve for a
few minutes. Package in desired
amounts leaving headspace.
Seal, label and freeze im-
media tely.
Eat what you can and what you
can't, can.
